Chiffon with my cute stamp!


Saw a fellow baker who did her chiffon with the stamp! So cute to resist and so I also carted 1 from Taobao! 😂😂😂


Never regret getting as it makes the cuppies looks even cuter in that size. Today I am using this recipe from this baker in her facebook page. She shared a lot of her chiffon recipes, you should take a look! Loved how her chiffon doesnt sink in and it still so bouncy and rounded top! So needed to learn and keep on practising.

I am using her basic original recipe for cuppies. I added and adjust the ingredients so that I can make them into pandan and chocolate flavour. Kids will get to bring them to school tml! 

Original Chiffon Cupcakes
50g Cake flour
40g milk
20g Oil
3 yolks

3 whites
45g sugar

Pandan: Add 1 tsp of pandan paste to above recipe
Chocolate: Add 1 tsp of vanilla paste and sub 10g of cake flour with cocoa powder

1) Mix cake batter til smooth
2) Beat whites til frothy and add sugar. Continue to beat til soft glossy peaks
3) Add 1/3 of whites to batter and mix well. Fold in remaining whites. 
4) Bake at 180deg for 40-45mins or til top is nicely browned.

Breadmaker Chocolate Loaf


Super soft!! Love the chocolate loaf..!! Using the same recipe yesterday, I modify it slightly into a chocolate loaf! All done in the breadmaker and so so SOFT!! 


The chocolate chips melted into the bread loaf! I think I need to find out the timing to put in the chips so that it wont melt into the bread again. Definitely worth a try! Yummmsss!!!

Chocolate bread loaf
120g chocolate milk
70g water + 2tbsp cocoa powder (melt and stir) 
20g butter
5g salt
20g sugar
250g bread flour
3g yeast

1) Follow the above sequence to put ingredients into the bread maker. I leave it to knead, proof and bake in it! Cool before slicing them!

Breadmaker bread loaf



Saw this recipe shared by a facebook page that sells product in Taiwan. Chanced upon this breadmaker recipe and decided to try out! 


First day I tried kneading with the breadmaker. I made 1/2 batch into mini sausage buns and 1/2 jnto a plain pumpkin seed loaf. Results is soft fluffy bread! But the loaf bread is slightly drier the next day tho still very soft. 


Today I totally leave it to knead and bake in the breadmaker. Personally after slicing, I can notice that the bread is even softer as compared to yday’s loaf! I will be back to review after tomorrow’s texture! 


Breadmaker Bread Loaf Recipe (adapted from here)
190g Milk
20g Butter
5g salt
20g Sugar
250g Bread flour
5g Yeast

1) Follow above sequence and select ‘Sweet bread’ mode. I added in mixed nuts when the dough is doing 2nd knead! Yum!!

Easy Stir Fry Noodles


Inspired by RecipeTin, I have tried stir frying this noodles twice, both attempts using different kind of noodles. My first was using maggi mee as per her recipe. It was yummy and delicious even tho I didnt add any hoisin sauce. Today I tried with egg noodles and it taste even better, in my views. 


This require 1 pot, frm blanching noodles, stir frying the ingredients before tossing the blanched noodles in the wok! Definitely the way to my family’s stomach! All love this rendition, especially my 3 kids. Therefore, sharing with you the ‘sauce’ i came up with so that you can have a try too! But if you want RecipeTin’s recipe, here you go! 

Easy Stir Fry Noodles (served 6-7 adults) 
8-9 portion of egg noodles, blanched
Minced meat of your choice, I used chicken
Carrot strips
Spinach
Onion, cut into thin strips
Garlic, 1 tsp chopped

Sauce: 1 cup water, 1/2tbsp dark soy sauce, 1 tbsp oyster sauce, 1-2 drips of fish gravy, pepper

1) Sautee onions til transparent. Add in carrots and garlic and stir fry til fragrant.
2) Add in minced chicken and stir them well.
3) Add in above sauce when chicken is 80% cooked. Toss in spinach as well.
4) Once ingredients is cooked, toss noodles and mix them well. Add a bit of water if too dry. Serve warm.
