Canned Pork Bee Hoon (Thermomix)


Been wrecking my head recently on what to cook. Then remembered it has been a while I cook Canned Pork Bee Hoon. Since it is easy and simple without much fuss, here we go! 


Its simple yet always welcomed for my family at any time. Recording down to get the perfect taste each time!
 

Canned Pork Bee Hoon (Thermomix)
5 portion bee hoon, AA brand soaked 1min
1 can stew pork chop
Water, add water to can pork gravy to full
3Tbsp dark soy sauce
Pepper

Cabbage & French beans, optional

1. Chopped garlic, 1.5Tbsp oil & veg if any
5mins, 120deg, rv sp 0.5

2. Add canned pork n water. Bring to boil
8mins, 120deg, rv sp 0.5

3. Add beehoon n dark soy sauce
5-8mins, 120deg, rv sp

Chocolate Fruit Tarts


Been craving for fruit tarts as I really love eating the tart base. Loved crunchy base each time I bite into a tart. ❤️



Saw this recipe while browsing cookidoo and saw this 2 recipes! Cant imagine how this 2 pairs together as a fruit tart!!! I totally love the custard, felt like can eat like a pudding with fruits as topping! 


I made some custard corn bread as I had a lot of custard! My kids love it so much that they were snatching the last corn bread! LOL.

Chocolate Tarts (adapted from Cookidoo)
170g plain flour
30g cocoa powder
100g unsalted butter, cubed and freeze 30mins
50g icing sugar
1egg

1) Add all ingredients - Turbo 2s x6 times
2) Roll out on floured mat and shape into mould.
3) Fridge for 45mins and bake 180deg x 10mins

Cream Filling (adapted from Cookidoo)
70g caster sugar
40g cornflour
500g milk
2 eggs
2 yolk
1tbsp vanilla extract 

1) Add all ingredients - 7mins/90deg/sp 4
2) Pour cream filling out and cover top with cling and cool for an hour. Fridge for 2hrs before assembling

Chocolate Muffins - Thermomix


Needed a quick break to destress before I sit down to study with my secondborn. Scroll thru my saved bookmarks and decided on baking these! 


Very easy to put together after simply melting the butter, jus dump all ingredients in to mix 5seconds. Another quick 5sec mix to add in the chocolate chips and some pecans. Texture so soft and fluffy! πŸ˜‹πŸ˜‹


Made some with sprinkles on top and the youngest was so thrilled! He took a peek and saw all the colourful sprinkles and says ‘Mummy I love you! You are the great COOKER!’ πŸ˜‘πŸ˜‘πŸ˜‘ mehhh. 
 
Chocolate Muffins (adpated with slight modifications from here)
Makes 12 
170g Butter
255g Cake flour
1tsp Baking powder
1/2tsp Baking soda
180g Caster sugar
2 Eggs
2tsp Vanilla extract
200g Sour cream

Toppings: Chocolate chips or up to your preferene

1) Melt butter - 2mins/60deg/rv sp 2
2) Add above ingredients except toppings - 5sec/sp5
3) Add in toppings - 5sec/sp5
4) Bake in preheated oven 180deg x20mins or til skewer comes out clean

Cookie Crumble Cheesecake - Thermomix

 

Hub has been asking why I didnt bake his favourite when he sees me on a baking streak. Been a while since I have been baking too. And I knw he loves cheesecake without the cookie base, I decided to make 1 for him!


As usual I had to do a ‘Priscilla’, using the wrong size of the cake tin ONCE AGAIN! Lol! It would have fit a 4” nicely with a nice height! I added a cookie crumble toppings to create a texture and enhance the flavour. I had to say, He AGREES! 

The wrong tin aside. The texture of the creamcheese was creamy yet not overly gelat. The lemon juice helps to add some zest to it. The cookie crunch helps to elevates the texture so well that hub gave his thumbs up!


Packing 2 slices off to my neighbour! ❤️

Cookie Crumble Cheesecake (adapted and modified from some recipes in Thermomix Truly Asian)
- Makes a 4” nicely 
Cookie Crumble toppings: 
35g Cake flour
20g Plain flour
20g Butter
30g Sugar
6 Chipsmore cookies, crushed in pieces

Creamcheese Filling:
250g Creamcheese
40g Milk
1egg + 1 yolk
1tsp Vanilla extract
1tsp Lemon juice
70g Sugar

1) Blitz cookie crumble toppings except chipsmore and keep in a bowl and set aside for later - 10s, sp6
2) Put all creamcheese, milk, sugar and vanilla extract into mixing bowl - 20sec, sp4
3) Add in eggs, lemon juice - 20sec, sp4
4) Pour creamcheese mixture onto baking tin. Sprinkle cookie crumble evenly and gently on the top of cake
5) Bake at 180deg x10mins then lower to 150deg x30mins or til cake set. Leave oven door ajar and cool inside
6) Referigerate once cake is fully cooled before serving

Chocolate Cake


Been trying out all the ‘quick-mix’ kind of cake recipes to see if its really yummy and good to have whenever we have a sugar crave to satisfy. 


The kind of erupted cake top! So funny.. πŸ˜‚πŸ˜‚ It is chocolatey, moist and rich. Love! Just nice for a chocolate lover like myself. 😍

All it took me was 5mins to mix the batter and then another 5mins to wash up. Time to do my other chores and prepare for lunch! 😍 
 
Too Easy Chocolate Cake (adapted from Cookidoo)
120g Butter
2eggs
100g milk
1tsp vanilla extract
120g self raising flour (i used plain flour + 1tsp baking powder)
120g caster sugar (i used 100g)
30g cocoa powder
1tsp baking powder (i omit since i added above)

1) Preheat oven 180deg. Melt butter in mixing bowl - 2mins 60deg sp1
2) Add all remaining ingredients - 15sec, sp 5
3) Pour batter onto baking tray and bake for 30-35mins

Homemade Ban Mian


Been wanting to make my own ban mian for the longest! Tonite decided to have a go since the recipe looks too easy not to try! 


The dough was not sticky and very easy to handle. Just cut into thin strips and further pull them thinner. No sweat! Lol! 


Best part was it took me barely an hour frm start to end to have a bowl of hot seafood ban mian to serve for dinner tonight! Definetely a keeper 😍

Homemade Ban Mian (adapted from cookidoo)
**I halve the recipe, good for 4pax portion
250g Plain flour
120g egg+water
20g oil
pinch of salt

1) Knead mode 2mins
2) Roll into a ball and rest for 10mins
3) Split into 4 portion and roll out thinly.
4) Cut into thin strips and further pull out each strips thinner
5) Put water in mixing bowl - 15mins, varoma, rv sp 0.5
6) Once boiling, cook noodles for 2-3 mins and set aside for use.

Char Kway Teow - Thermomix

 

Buying time for ‘Me Time’ during school holidays! Having 1-dish meal for lunches is the best way! 

Been wanting to fry kway teow and decided to put into action today. I was doing laundry while cooking lunch at the same time. This buys me 30mins to do a short HIIT and yet able to serve a homecooked meal for the kids! Youngest boss said its good and went for second helping! Mummy’s heart is happy secretly πŸ™Š

Of cos this minus the wok hey from the wok but it spares me a greasy kitchen to clean up. Yet I can have homecooked meals for my family and still buys extra 30mins to self love by doing a short workout. Amazing gadget I ever invest in! 


Ok, cos I am a visual person. I had to do a short video to show steps by steps for this recipe. And always remember to add ur butterfly whisk when u fry noodles, beehoon or kway teow. (cos i always forgets and ends up with shorter pieces 😬😬)

Char Kway Teow - Thermomix (adapted frm my prev recipe)
2Pkt Kway Teow (Feeds 5 adult)
2-3 Tbsp Dark Soy sauce
1-2 Tbsp Light Soy Sauce
3-5 Tbsp Sweet sauce
200g pork belly, cut into strips
1pk xiaobaicai
3cloves of garlic
1Tbsp cooking oil
1 egg

1) Add garlic to mixing bowl - Turbo 2s for 2 times
2) Add cooking oil to garlic - 3mins, varoma, rv sp
3) Meanwhile, pour hot water on kway teow and loosen them up. Pour away the water and add dark soy sauce, light soy sauce and sweet sauce and mix well. Put aside
4) Add pork belly - 5mins, varoma, rv sp 0.5
5) Add Veg - 3mins, varoma, rv sp
6) Remove cooked ingredients. Add butterfly whisk and pour in kway teow - 3mins, varoma, rv sp
7) While cooking, drizzle in beaten eggs and add in cooked ingredients. (You can stop midway to help toss the kway teow more evenly)
Serve warm!

Sweet Sour Chicken - TM/Foodi


Been a while I cooked sweet sour meat for the kids. Decided to cook today as lazy to think wat to cook and this dish always their fav to have. 


Fuss-free easy frying for me. And this round lesser mess cos I used a ziplock to flour coat them. So so so much easier! πŸ‘πŸ» And i followed the traditional way of frying to pour back all the ‘fried’ chicken cubes for a quick aircrisp! Yums


After stirfrying my veg, did a quick cook for the gravy with my thermomix! So easy peasy! Important is no greasy kitchen 😍


Simple meal tonight ❤️

Sweet Sour Chicken 
2 Boneless leg, into cubes
1 egg
2Tbsp garlic powder
Pepper
Potato flour for coating

Onions, small pcs
Capsicum, small pcs
Cherry tomatoes, halves

Sauce: 
3Tbsp tomato sauce
2Tbsp plum sauce
1Tbsp sugar
1/4 bowl water
1Tbsp Lemon juice
1/3 rice bowl water
Cornstarch to thicken

1) Marinate chicken cubes overnight
2) Take a ziplock and add enough potato flour to coat and add in chicken cubes by pieces. Toss then well enough to be coated
3) Put nicely into Ninja and bake 180deg x15mins, flip and bake another 5mins
4) Once all is fried, put all back in and aircrisp for 3mins. Set aside. 

5) Add 1tbsp oil and onions - 3mins, varoma, rv sp
6) Add capsicum, tomatos - 3mins, varoma, rv sp
At 30sec point, add in above seasonings and thicken it
7)  Add in airfried chicken cubes - 30sec, varoma, rv sp

Marble Butter Cake - Thermomix

 

Been craving for marble butter cake and so heartpain to pay $0.90 for a small slice of it. Decided to wait patiently for my big eggs to come and bake 1 whole cake for myself. 

I didnt have any self raising flour so I replaced with plain flour + baking powder. Thankfully works well. And this time, I followed a tips from a Facebook page - JoJo Kitchen on making a failproof butter cake texture! And yes, indeed it helps so much! (Refer to the first 2 steps of the method below, they are not in cookidoo recipes)


Made a small boo boo as I took out the cake too soon before the center was cooked. Overturn to cool for 10mins then realised the batter was flowing out. Panic and quickly toss back to the baking tin and bake another 8mins. 🀞🏻🀞🏻

Thankfully it still soft and nice on the inside, only flaw would be the exterior is slightly crusty. πŸ™ˆ But the extra tips on blitzing the sugar and then a quick mix of the butter indeed improved the texture so much! 

Marble Butter Cake (adapted from Cookidoo)
150g sugar
250g butter, soften
5 eggs
50g milk
1tsp vanilla essence
250g self raising flour

1) Turbo the sugar 2s x 3 interval and scrap down (cover with mc)
2) Add in soften butter - 20s sp 5 (cover with mc) 
3) Add butterfly whisk - 2min sp 3.5
4) Add milk, eggs, vanilla in a measuring cup and drizzle down while mixing - 40sec sp 3.5
5) Add flour and salt - 30sec sp 2
6) Take out butterfly and mix 2tbsp cocoa powder to 1/3 of mixture (you can omit cocoa if you want to bake butter cake)
7) Bake in preheated oven at 170deg x 30-40mins

Yakisoba - Thermomix

 

Because the gal is watching some jap manga, some jap anime so she asked me, Mummy u know what is Yakisoba? Do you knw how to cook it? I told her I nvr tried before but will try to cook it for her if she wants to have a taste. And so, I got to work! 

I search cookidoo and found out that IT INDEED HAS A SHRIMP YAKISOBA RECIPE! Decided to add smoked duck since they love it. Jus a simple version would do the job I supposed. πŸ™Š


And yes, its quick and delicious. But noodles wise, probably we would love to use angel hair next round. πŸ˜‹πŸ˜‹ Made a simple lunch for everyone today! The 3 portion noodles got us a fair share each! 

Yakisoba - Thermomix (adapted from Cookidoo)
3portion Noodles
1 smoked duck
6 tiger prawns, halve
1/2 onions
sesame oil
oyster sauce


1) Bring water to boil - 15mins 100deg sp1
2) Add noodles in to blanch for 3-5mins once water is boiling. Drained and set aside
3) Add sesame oil, onions - 5mins 120deg rv sp1
4) Add prawns and smoked duck - 3mins 120deg rv sp
5) Add in noodles and toss them slightly - 1min 100deg rv sp 
(i stopped at 30sec and help to toss the noodles evenly)

Nutella Brownie w/Walnuts & Sea Salt chips


Been thinking what to do with my expiring nutella and decided to put into good use! Making a special brownie treat for my secondborn tutor! 


I overbaked slightly as I was busy with meal preps but luckily it is crusty at the sides and fudgy in the middle! This would go so well with a scoop of ice cream!

As I did not have any vanilla, I decided to load it with extra chocolate icecream! Lol! So rich, fudgy, chocolately! Great way to enjoy your Saturday dessert treat!  


Simple belated Teachers’ day gift for my secondborn tutor. Hope she likes it!

Nutella Brownie w/Walnut & Sea Salt Chips (adapted from Thermomix Truly Asian)
250g Nutella
30g dark choc chips
2 eggs
60g cake flour (I used plain flour)
pinch of salt
Extra choc chips or walnuts or desired toppings

1) Preheat oven to 180deg
2) Weigh using mixing bowl and add in all ingredients
3) Mix for 45secs, sp 5
4) Bake for 12mins x 160 deg (I lower as I am using Ninja foodi, if not maintain at 180deg)

Banana Walnut Cake - Thermomix


Been wanting to bake whenever I see my friends sharing their bakes. Today finally decided to drag my butt to bake! And it didnt disappoint me! 10mins is all it takes to make the batter and washing is so convinent! Jus a mixing bowl and a baking tin. Loving it!
 

Can u see how smooth the batter is? So nicely mixed up! And u knw its a good batter and feel nice about it when u sees it! OMG SMELL SO GOOD!!


I baked for 45-60mins, tenting it at the end to prevent the top from burning. End results is amazing! Soft and so fragrant this round! Youngest kept asking for bigger piece when I gave 2 aldy. Even secondborn loves it and go for second piece! 

Banana Walnut Cake (adapted from Cookidoo)
4 eggs
150g sugar
180g oil (i use olive oil)
250g banana
180g flour
1tsp baking powder
1tsp baking soda

1) Preheat oven to 150deg
2) Insert butterfly whisk. Add eggs, sugar, oil. 5mins, sp 3.5
3) Remove butterfly whisk. Add banana. 15sec, sp 5
4) Add flour, baking soda, baking powder. 45sec, sp 3
5) Pour batter out. Put walnut on top and bake at 150deg gor 45-60mins
