Blueberry Coffee Cake

Today baked a Blueberry Coffee Cake for school snack. Been wanting to try this recipe and finally gotten some korean frozen blueberries that was on promo last weekend, just nice to use them for this!

This recipe uses plain flour, but with the addition of yogurt, the whole cake is so soft. And no, it does not use any coffee, and my guess for the name is due to the cake is eaten during tea/coffee time?

The topping is slightly sweet, which I think I will use only brown sugar for the next round and probably 2x of the flour so that there is more crumbly crumbs on top! I love struseel tops!!

The cake base itself is soft n moist. The tangy from the blueberries even out the whole cake. Totally love it! ❤️ Do give it a try.

Pandan Chiffon

Baked Pandan chiffon early this morning as wanted to multi-task since I be going for facial during lunch time later. Wanted to eat lunch after back from work while working.

Nicely browned, and love the smell when you bake with natural pandan extract. It smells so much fragrant when its baked with pandan leaves.

I think I didnt do a good job of folding them in this morning but thankfully it turns out well still. Not super fliffy but still moist and fragrant. Only thing is I think I would cut back a bit of sugar nxt round.

Blending and using my strainer to get the juice out. And i mix it with coconut cream and fresh milk for a healthier version of it. Homebaked is always the best as you can adjust and modify the recipe to your own tastebuds and preference.

All packed in boxes to bring to office to share with collits tomorrow. And leaving 1 at home for my family to snack, as well as packing them for lunchboxes tomorrow too. Took 1 container less and was saying that I didnt expect to have so much. Hub says ask me to leave the balance for him as he could finish them for me 😂 Must have smell so good. Go try it!

Banana Muffins

Today decided to bake this Banana Muffins for school snackbox. Have bookmarked a while as am curious how it would taste baking with wheat flour. Sounds healthier to me in a way. 😂

The aroma of the cinnamon and nutmeg, even before sending to the oven smells so good. Already very excited to see the end products.

Waited patiently for it to cool down and Hub happen to have 1 for his tea break, just in time. I love such soft n fluffy bakes when all it took is less than 5mins to prep and send to oven. Can you see how soft it is?

This is the flour I used. It says Super fine wheat flour. Shall explore more recipe using this flour and see what difference it makes.

Baked Egg Cups

Baked some egg cups for breakfast and lunchboxes to school. Decided to share a simple prep-ahead and yummy lunchbox recipe that I always play around with.

I am using this ingredients for this batch. I always change the toppings around to make it feel like a different thing each round I made them. I tried brocolli, spinach, ham, chicken, sausages as well. It all depends what your family likes. This batch is the first time I am topping them with feta cheese ❤️

This is how their final lunchboxes looks like! Left is for my sec 3 firstborn and right is for ny pri 2 youngest child. Both have different preference and so I always try to pack them to the best I can.

Sitting down to take 1 before my run after dropping the youngest to school. He also tried a mouth and pass it. Says he gonna come home and have more for lunch too. So happy and blessed when your family love the food you made. Even my second child also had it for breakfast this morning as he was asking what was it when I was packing. Another thumbs up customer!

Baked Egg Cups

I used capsicum, cherry tomatoes, corn, shrimps

Traditional Sponge Cake

Today was impromptu bake as was planning for a trip to JB. End up plan was postpone, as such decided to bake and prep something for youngest classroom snack.

Saw this recipe a while back and bookmarked it. Instead of baking full recipe for a 6inch cake, I made them into small cupcake sizes and topped with his favourite oreo bits.

The inside was soft and fluffy. But had a small small amount of flour bits as I was lazy to sift the flour. The sweetness was just nice and good to maintain as it is. Probably the next round I will be hardworking and sift my flour 😂 Definitely a keeper!

55g Sugar

Matcha Granola Muffins

Today i venture and decided to make this for my firstborn. Have seen this recipe previously and very intrigued to try out as it seems to be a low calories bake, without the use of flour. It uses banana to bind the ingredients together and i was keeping fingers crossed when i see it rises slightly while baking them.

I topped some with balanced banana slices, and some i experiment with white chocolate chips, leaving some original without toppings.

The inside is slightly moist with a bit of crunch from the granola. Its a very interesting texture. The faint flavour of the matcha, not too overwhelming too! I love it.

Luckily firstborn love it too and says gonna have it for breakfast already! Me personally enjoyed it and luckily it passed hub’s fussy tastebud too as he always ‘failed’ my healthy bakes 😂

Do try it, its a very straightforward recipe. Just dumped all in and blend then throw in the oven already!

Matcha Granola Muffin
Recipe from cookidoo, with slight adjustment
9oz granola (i used matcha granola)

8oz banana
2tbsp matcha powder

1tsp vanilla
1/2tsp salt
11/2tsp baking powder

1) Put all ingredients in - 20sec speed 6.5
2) Pour batter into cupcake cases and bake 20mins x 180deg

Close up of the texture! Yums!

All it took me was 5mins to mix the batter and then another 5mins to wash up. Time to do my other chores and prepare for lunch! 😍

Marble Butter Cake - Thermomix

Been craving for marble butter cake and so heartpain to pay $0.90 for a small slice of it. Decided to wait patiently for my big eggs to come and bake 1 whole cake for myself.

I didnt have any self raising flour so I replaced with plain flour + baking powder. Thankfully works well. And this time, I followed a tips from a Facebook page - JoJo Kitchen on making a failproof butter cake texture! And yes, indeed it helps so much! (Refer to the first 2 steps of the method below, they are not in cookidoo recipes)

Made a small boo boo as I took out the cake too soon before the center was cooked. Overturn to cool for 10mins then realised the batter was flowing out. Panic and quickly toss back to the baking tin and bake another 8mins. 🤞🏻🤞🏻

Thankfully it still soft and nice on the inside, only flaw would be the exterior is slightly crusty. 🙈 But the extra tips on blitzing the sugar and then a quick mix of the butter indeed improved the texture so much!

Marble Butter Cake (adapted from Cookidoo)
150g sugar
250g butter, soften
5 eggs
50g milk
1tsp vanilla essence
250g self raising flour

1) Turbo the sugar 2s x 3 interval and scrap down (cover with mc)
2) Add in soften butter - 20s sp 5 (cover with mc)
3) Add butterfly whisk - 2min sp 3.5
4) Add milk, eggs, vanilla in a measuring cup and drizzle down while mixing - 40sec sp 3.5
5) Add flour and salt - 30sec sp 2
6) Take out butterfly and mix 2tbsp cocoa powder to 1/3 of mixture (you can omit cocoa if you want to bake butter cake)
7) Bake in preheated oven at 170deg x 30-40mins

Been thinking what to do with my expiring nutella and decided to put into good use! Making a special brownie treat for my secondborn tutor!

I overbaked slightly as I was busy with meal preps but luckily it is crusty at the sides and fudgy in the middle! This would go so well with a scoop of ice cream!

As I did not have any vanilla, I decided to load it with extra chocolate icecream! Lol! So rich, fudgy, chocolately! Great way to enjoy your Saturday dessert treat!

Simple belated Teachers’ day gift for my secondborn tutor. Hope she likes it!

Burnt Basque Cheesecake

Finally did this burnt basque cheesecake after waiting so long! Hub’s bday happen during this Circuit Breaker period. And unfortunately, most of the places selling cakes were unable to operate and thus I think baking my own is safest.

Worse if it is so hard to get all the ingredients or groceries lately online. Q-ing isnt an option as it is always packed with long Qs. Only go every 2-3 days when we need to buy bread. Even online and NTUC ran out of whipping. Thank goodness I alway stock the basic flours and sugar so I decided to take the chance and went with replacing whipping cream with milk. 🤞🏻🤞🏻

Thankfully the texture turns out well. Being a noob, and haven tried a burnt cheesecake before, I didnt know it was meant to be wobbly and creamy for the cake texture. After baking for 30mins, cake was so wobbly that I continue to bake for another 20-30mins and even had to top bake to burnt the crust. Only after baking and keeping the cake did I find out from a friend that its supposed to be creamy on the inside, instead of a firm texture. So glad mine wasnt too far off even with the lack of whipped cream as well as overbaking it! ❤️

Happy birthday my dear hubby! May we grow old together still loving each other very much for as long as we are together! Thank for all the love and tolerance along this long road. Today marks the 14th year of our ROM anniversary too! I love you and will always do. Hope you love the dinner spread tonight! ❤️

Hub was requesting for me try baking banana bread. So i roughly googled and found this recipe. Decided to go with this recipe as I am sold by how delicious and soft the banana bread looks!

First time trying and I was a bit nervous. First my bananas was short, only managed to mash 200g of bananas. Top up with some milk to 250g and mash them up. Keeping fingers crossed it will dry up the bread. Heee..

Took a while to bake as it was a last min decision. Surprisingly looks good and smell so nice! Couldnt help it and cut a small piece once I took out from the oven and get hub to taste test! Hurray! Passed!! He says its yummy!

Simple, easy and no mixer required! Do try it at home!!

Good old banana cake

Recently a fren shared this banana cake that she has been baking, telling us how yummy it was and we were even troubleshooting the ripeness of the banana for the cake. Didnt had a chance to try as the few times she baked, couldnt meet her up.

So this contagious baking bug, infected a preggy fren of us. She bought 2 bunch of bananas just to bake them! And she tempted me ONCE AGAIN that it is so so so YUMMY! Ok, now my mum handed me a bunch of banana from praying so I need to try baking it too! And being stuck at home due to the outbreak of the coronavirus, I need something else to do to lift my mood up!

This morning I weigh the ingredients out, and busy with the kitchen chores while prepping to bake the cake. Had to use my favourite pink wilton pan! ❤️❤️ And the youngest was busy entertaining himself, with his toys n duplo.

Finally done and top the banana slices on top, kept an area without as I wanna try the cake, without the banana slices. hee 😅 I was super nervous with the whole process as I really really am very bad with baking a cake using whole-egg method. The ribbon stage is manageable but the folding in of flour and oil usually makes me fail. Sob.. 🤞🏻🤞🏻So fingers crossed, I sent it in to oven!

Oh it must be my LUCKY DAY! I totally succeed!! Yay! So so happy! These are going in the kids’ snack box tml for school and I took a bite. The only flaw was a bit dry and i found out that I accidentally uses 180g flour instead of 160g! This must be the reason that causes the dryness. And I only realised as I was typing this entry post! 🤦🏼‍♀️ But its still totally yum and can taste the banana fragrance! ❤️❤️

See the cross section clearer, flour was nicely folded in! Yipeee!! Will definitely bake them again!

Banana Cake (not sure where my fren got it from)
3 Eggs
120g sugar (i use 90g)
200g banana, mashed
160g plain flour
1/4tsp baking soda
1/2tsp baking powder
90g corn oil (i use 60g)

some banana slice for toppings (optional)

1) Mix eggs til foamy and slowly add in sugar
2) Continue mix and add in mashed bananas
3) Continue to mix til ribbon stage, takes about 10mins or so
4) Fold in sifted flour in 2 additions with spatula
5) Take out spoonful of batter and mix with oil, before adding to the batter
6) Mix well and pour onto a greased pan, lined bottom with baking paper
7) Decorate with banana slice if needed
8) Bake at 180deg for 40mins or til top browned nicely

Oreo Kek Lapis

Been wanting to try baking this for the longest time. But the process, amount of eggs always deter me from doing it. I cant imagine standing in front of the oven or rather in and out of kitchen for a good 2-3 hours without disturbance from the kids so I always put it off.

I baked approximately 8-9 layers which I cant even remember exactly. Haha. I only know I bring in and out of oven MANY TIMES! 😂😂😂 Cake batter I seems to overmix slightly, or did I accidentally overmix or undermix the butter portion. It sort of curdle a bit. Whites was slightly overbeat too! 🙈🙈 🙈 Tastewise was ok, I think can add a bit more spice for the taste. Texture is ok, except 1-2 layers I think a bit underbaked? Not too sure either as I need to make again to know! 🤔🤔 I wonder when will i have the courage!

I wrap the bigger ones in cling. Apparently need to be kept a day in airtight for the flavour and oil to be released. Keeping fingers crossed tml will be better. But i dunno why my bottom layers seems a bit oilier. Need to study again if its normal!

Kids will get some for school snack. Hope they enjoy this simple Oreo kek lapis that Mummy baked for them!

After giving them out for friends to taste, I am glad most are positive reviews, even from my hubby. And I am left with the sides which I trim from the cakes. Also very yummy le. I wonder what does the bakery does with those trimmed sides?
