Yakisoba - Thermomix

 

Because the gal is watching some jap manga, some jap anime so she asked me, Mummy u know what is Yakisoba? Do you knw how to cook it? I told her I nvr tried before but will try to cook it for her if she wants to have a taste. And so, I got to work! 

I search cookidoo and found out that IT INDEED HAS A SHRIMP YAKISOBA RECIPE! Decided to add smoked duck since they love it. Jus a simple version would do the job I supposed. 🙊


And yes, its quick and delicious. But noodles wise, probably we would love to use angel hair next round. 😋😋 Made a simple lunch for everyone today! The 3 portion noodles got us a fair share each! 

Yakisoba - Thermomix (adapted from Cookidoo)
3portion Noodles
1 smoked duck
6 tiger prawns, halve
1/2 onions
sesame oil
oyster sauce


1) Bring water to boil - 15mins 100deg sp1
2) Add noodles in to blanch for 3-5mins once water is boiling. Drained and set aside
3) Add sesame oil, onions - 5mins 120deg rv sp1
4) Add prawns and smoked duck - 3mins 120deg rv sp
5) Add in noodles and toss them slightly - 1min 100deg rv sp 
(i stopped at 30sec and help to toss the noodles evenly)

Stirfry Udon - Thermomix


Totally loving the thermomix cooking lunches or quick meals. 


I love the preclean function cos after the cooking, i get burn marks at the bottom of the bowl. Tis helps me get my meals fix quick and easier to wash after! 


Stirfry Udon
3pkts Udon
Jap Fishcake
2-3clove garlic
2Tbsp oyster sauce
2Tbsp dark soy sauce
1Tbsp mirin
1/4 cup water
1Tbsp olive oil

1) Add garlic into mixing bowl
Turbo 2s
2) Add in cooking oil
3mins, 100deg, reverse spoon
3) Add in fish cakes, sauces and water. Add udon in
(midway i open up and toss the udon)
5mins, 100deg, reverse spoon

Baked Sushi Rice

 

So much rave about baked sushi rice. Decided to make some for my kids. Ran out of cucumbers so I added tomatoes for them! Topped it off with mozerella as well, cheesy baked sushi rice! 


Very easy to assemble and so easy to prep for a meal. Esp on lazy afternoons or nights. Seaweed and sushi rice, never go with my kids. They totally adore! 


Along with some moopings and breaded crabsticks, a simple dinner is ready! 😍

Baked Sushi Rice
1.5cup cooked sushi rice
2sachet of seaweed toppings mix (any korean or jap brand is fine)
2-3Tbsp of furikake
1Tbsp sesame oil

Rice toppings:
Salmon slices (marinate in 1tbsp mirin, 1tsp lemon juice, 1tbsp jap soy sauce)
mozerella cheese
mayonaise

1) Stir toppings into cooked sushi rice til evenly mixed
2) Press sushi rice firmly onto baking pan (I used disposable rectangle foil)
3) Top it off with marinated salmon slices
4) Spread mozerella cheese, followed by mayonaise
5) Put rice onto pot and baked at 160deg x 8-10mins
Serve with seaweed. Enjoy!

Easy Jap Curry Rice w/Steak


Craving for this for quite a while. Decided to cook this on a busy weeknight. Easy and no need to clean up greasy kitchen plus all cooking in a pot! 👏đŸģ👏đŸģ

Simply grill the steaks, then steam the rice then cook my jap curry! All ready in about 45mins with minimum involvement and I still can supervise my boy’s chinese spelling. Important is its all-time favourite for the family ❤️
 


Easy Jap Curry Rice w/Steak
2 ribeye, pat dry and season with pepper
1 cauliflower head
2 carrots
1 potato
1 onions
1 pack baby asparugus
4cubes  of Jap curry cube
3cupd of water, add more if needed (see how thick you want the gravy to be)

2cups of Jap Rice : 2cups of water - 2tbsp water

1) Grill steak x10mins and flip then grill another 3mins
2) Steam rice using steam mode x 15mins in Ninjafoodi and set aside
3) Saute mode Hi: Add 1 tbsp olive oil and onions and saute til fragrant
4) Add in all cauliflower, potatoes and carrot and mix well. Add in 500ml of water and bring to a simmer. Turn to low mode x5mins to let the vegetables soften. 
5) Add in Jap curry cubes and stir in gently, adding the remaining water bit by bit to the consistency you want
6) Once starts to simmer, add in asparugus and let it start boiling.
7) Close lid and pressure cook on Hi x 2mins and quick release. Serve warm over rice with beef steak. Enjoy

Tako Balls


Been wanting to do this again after i gotten the non-stick tako ball pan. A nice neighbour turn friend got me a pack of the flour for me to reattempt after my first try failed. 😂😂



Using the tako ball mix from Don Don Donki. As the instructions was partially covered by the english label (for the ingredients), I made a rough estimation on what I could managed to see and mix the batter up. Phew! I think it seems alright! 


First i heat up and took up pan. Pour batter with a ladle, put in ingredients then let it set a bit. Using the sticks to flip them up a bit, i scoop more batter to cover them. And repeat a few times til i successfully make them into balls! 


Once it turns into a ball, doesnt have to be a perfect ball shape, i let then cook til nicely browned before taking them out. I topped them with the tako ball brown sauce (got from don don donki) , mayo and bonito flakes (got this from daiso). 


This is how it looks like inside after I took a bite. I think it is good for a first attempt! Yums!! Need practise more!!

Tako Balls (makes 36)
Toppings:
4 slices Ham, small cubes
Frozen corn
4 slices Cheese, small squares

Batter:
250ml Tako ball mix
400ml water
1 egg

Stir and mix well with a whisk. Follow above steps.

Jap Oreo Baked Cheesecake


Bookmarked this recipe to try baking for a friend I recently made. Nice owner of a pork and chicken seller online. In any case you keen to find out, here’s her page. I always get my fresh supplies of pork and chicken from her. 


So preggy has a lot of cravings so I decided to bake her 1. Supposedly bake the bigger one for her but the cake tin smashed the cake on the side when removing the base. This made me frustrated the whole afternoon. Luckily the taste really yummy and I didnt regret making the oreo cookies in coarse bits! 


Texture wise, I would say not bad. Light and fluffy and the bits of the cookies makes it so yummy!! I totally forgot its a baked cheesecake as I think the extra 3 cookies I added sort of brings out more oreo taste! 😂😂😂 But I love it, especially my kids!!


Luckily the smaller one still looks presentable! Hopefully the mummy enjoys her sinple treat. And as I am typing, I realised I forgot to pass her bak chang! 🙊🙊🙊



Jap Oreo Baked Cheesecake (adapted with slight changes from JeannieTay)
170g Creamcheese
60g Butter
40g Sugar

170g milk
4 yolks
20g cornflour
40g plain flour
1tsp lemon juice
1tsp vanilla paste

4 whites
80g sugar

9 oreo cookies, crushed in coarse bits n keep 6 cream

1) Melt the creamcheese, butter and sugar over double-boil. I did mine over a plate of hot water.
2) Add in milk and mix well. 
3) Add in yolk, oreo cream, flours, lemon juice and vanilla paste. Mix well n set aside.
4) Beat whites n sugar til stiff peaks. Add in 2-3 addition.
5) Fold in oreo bits.
6) Line base of cake tin, bake for 50-70mins at 180deg for first 30mins then lower to 150deg. Cake is done when top of cake is nicely brown.
7. Invert and cool before slicing!

Mochi with Chocolate filling


This week we did Mochi. Lots of scolding cos mummy a bit OCD as they goes directly into our mouth after moulding them. 😂😂 Mainly the boy who got them most as he doesnt have some ‘flair’ in wrapping them and thought the bigger the chocolate filling the better for him to eat! 🙊🙊 Ended up with messy and unable to ‘close’ mochi and chocolate oozing all over. đŸ¤ĻđŸģ‍♀️đŸ¤ĻđŸģ‍♀️

Nonetheless, they had some tries to wrap a couple, not much but like 3-4 of them to try out and have some experience of wrapping them. Most were unable to close up and seal. We only managed to wrap like 8-9 successful ones. We taste test after we done and left with 5 to keep for tea. đŸ˜ŦđŸ˜Ŧ

I think we wrap a bit too thick, chocolate were huge. Dough could have been softer and chewier. Will definitely try them again. And both opt for their favourite colour - Green & Purple mochi.


Little boy helped to mix the dough before microwaving them. Was a bit tough to stir them well so i took over. But at least they know what it is all about to making a mochi. 


Happiest moment, having them over tea break with fruits on the sides! Helper love the taste of the chewy mochi and generous chocolate filling too! My boy pop the whole thing in his mouth and says the mochi exploded! Yums! My gal is more ‘fussy’ about her food and says the chocolate is yummy and delicious but could have do better with a thinner dough and softer in texture. 😂


Mochi, makes approx 8-9 balls (Mochi from Cookat)
100g Glutinous Rice Flour
50g Sugar
1tsp Salt
100ml hot water
Drops of colouring (optional) 

Chocolate Filling (from The Squishy Monster)
120ml  Whipping cream
115g Baking chocolate

1) Melt baking chocolate in warm whipping cream. Stir well to combine and put in freezer to chill for at least 2hrs. Cut into desired sizes and leave in fridge til needed.
2) Mix flour, sugar, salt in bowl. Add hot water and colourings and stir well. Microwave 1mins covered with cling wrap, remove and stir. Microwave again for 20-30seconds.
3) Remove dough and put on dusted baking paper. Roll and cut into appropriate sizes. Mould like a wanton wrapper and put chocolate cubes and pinch edges to seal.

Simplified Mashed Potato Salad


Need to finish up the pack of baby potatoes and since my boy loves Mashed Potato, I decided to use them to make salad for him. Today we simply have Frozen Pizza along with Potato Salad. Definetely see him enjoying his lunch and finishing it up faster than usual.

Inspiration from JustOneCookBook but being lazy and rushing for time, I didnt exactly follow through. Instead I jus make use of the Japanese Mayo & Pepper to season only.. Ingredients used was Crabsticks, Ham, Egg, Potatoes. All ingredients cooked and cooled before assembling them..

As I kept the balance salad in the fridge cos worried it will spoil by the time my gal comes back (2hrs b4 she comes back), I spread them on bread and put mozarella and toast them. Drizzle some tomato sauce and serve with Honey Drink. Yes, my boy says he wants a portion too!!


Mashed Potato Salad
4 Baby Potatoes
1/2 Slice Ham, cubes
1/2 Crabsticks, cooked & shredded
1 1/2 Hard Boil Egg, cut small
Japanese Mayonaiseg
Pepper


1) Boil Potatoes til skewer can poke thru easily. Boil hard-boiled eggs. All leave aside to cool.
2) Sautee Ham Cubes, Blanch crabsticks.
3) De-skin potato and mashed them up. Cut up hard boil eggs. Add eggs, ham & crabstick. 
4) Drizzle mayonaise and pepper and mix well. Add more mayonaise if salad looks dry. Taste and add accordingly. 
Salad can be serve immediately or chilled.

Fried Rice Sushi


Busy this June, busy and sick today.. Lazy to feed the kids, came up with an idea of wrapping my Fried a Rice as sushi, along with their favourite Deep-fried Wantons!

Yes, the rice doesn't require much seasoning as the seaweed is quite flavourful. And I added chopped spring onions, carrots, mushroom, ham & chicken meat. Packed with veg n meat, quite a wholesome meal already huh? 

Nonetheless, my happy kids finish up the food in a jiffy! Jus that a bit of rice grains on the floor. Sickly mummy managed to rest and sit beside them eating their dinner with satisfaction.

Fried Rice
*can be your choice of ingredients*
Spring onions, chopped
Carrots, chopped
Mushroom, chopped
Ham, chopped
Chicken meat, chopped
1 bowl of Rice
4 sheets of nori

1) Fry rice as per norm, ingredients 80% cooked then add rice. Season with pepper and 1tsp fish gravy.

2) Put cling wrap beneath, nori on top, scoop rice and wrap tightly, using cling wrap to wrap like candy. Leave aside.
3) Once all wrapped, cut into slices. Serve.

Mochi Cheese Puff


I have bookmarked this recipe as soon as I seen it. I know I must at least give it a try. Why? First, it is a very simple and straightforward recipe. Second, I know outside selling them quite ex. I saw Takashimaya selling them for a few bucks. Thirdly, I think it will be a hit with my kids.

So, after dinner, cleaning up and bathing the kids and all. I just had the spur to bake them. And since I only had 100g of Tapioca starch left, I decided to halve the recipe. Was a bit worried as batter is a bit of thick but thin consistency. Haha, sorry, I am really no good in describing my food... 

End results, I have 12 mini cheese puff. It's really chewy, like mochi texture and soft. Not sure if it's due to not using blender, I find cheese taste not strong enuf. I am thinking strawberry or chocolate milk to replace for nxt attempt..

Mocha Cheese Puff (adapted from MummyMoo)
**i halve recipe
65g Tapioca Starch
36g Olive Oil
80g Milk
1tsp Salt
25g Cheddar
25g Parmesan Cheese
1/2 Egg

1) I put all ingredients in a metal bowl and whisk til well mixed with a whisk. Approximately about 10mins.
2) I butter my mini muffin trays, scoop and fill each hole to the brim. Bake at 180deg for 20mins.
3) Serve warm or keep on airtight after cool.

Oyako-Don (Chix & Egg Rice Bowl)


After seeing those Katsu-don, typically Japanese rice bowl, somehow quite keen to try my hand at it. It looks very simple but the challenging part would be to cook the egg til watery but not raw, and u can slurp it with th rice & meat. Mmmm..

Anyway, I decided to go for a non-deep fried version, meaning I will nÊed to pan fried or stir fry the meat or whichever ingredients. Since I am preparing for the kids, I decided to go 'onion-less'. First, I am always picking out the onions when I have this outside. Secondly, I doubt the kids would love it either. In order to make it more 'whole, I added frozen peas, carrots, corn and chopped lettuce to the meal. I go for a 'Fish' version cos Fish is better for kids to eat. Right?



I did 2 versions today, the chicken version for adults and fish for my lil ones. My hubby added a lil sukiyaki sauce to his, and my gal had some tomato sauce to hers (remind me of omurice, so that is the next challenge!) Both me and my boy had it plain and we all cleaned up the bowls. It is so simple, yet complete meal. Good to cook when you are alone with kids or feeling super lazy yet guilty if you don't cook. (You know what I mean right?) I completed everything in less than 30mins, including preparing the ingredients.

Verdict: Super yummy, and the gravy from the dashi stock, the watery eggs, the combi of the lettuce & meat. One word - YUMMY!! I will definetely cook it again, even when I am not lazy..

Oyako-Don, Fish & Chicken version (I refer and modified from tofoodwithluv)
1 Slice of Chix Thigh Meat, sliced
1 Slice of Threadfin Fillet, sliced
**Marinate both with sesame oil, pepper & cornflour
Lettuce, cut into strips
2Tbsp Frozen Carrots, Peas & Corns
1/2Bunch Japanese Oyster Mushroom
4 eggs, beaten

Dashi Stock - I put a sachet of dashi soup mix into 3 Cups hot water. Soak while I prepare the ingredients. 

1) Prepare dashi stock, Cook rice. While waiting for rice, prepare all ingredients.

2) Fry fish slice in pan, add oyster mushroom and frozen veg. Once 50% cooked, add 1/2Cup of dashi stock and bring to boil. 
3) Scoop rice to bowl. Add lettuce to boiling ingredients, add in beaten eggs then swirl a little. Once eggs are almost cooked, off the fire and gently scoop over rice. Serve warm.

Sushi & Udon on a Friday


I saw this blog with all my favourite sushi recipes. Oh my, I so wanna sink my teeth into them. I tell myself, I should attempt again. Try and never give up!!

I finally couldn't wait, I decided to make them for dinner. And in case I fail, I prepare Udon too. For emergency purposes, I can still serve just Udon soup with Prawn Tempura. I decided to be lazy, I bought frozen tempura, frozen oyster coat with cornflour for the sides. I used some Tempuras for the Dragon roll. Made some California rolls as well. 



I refer to the recipe here for making the sushi rice. I finally succeed, and I reduce the vinegar slightly. I didn't pour the whole amount of vinegar mixture, I used about 2/3 of it. I started wrapping and wrapping and wrapping once all the preparation work is done. Guess what? I spent 2 hours on this meal today. It is 3X the amount of time I spent to cook ä¸‰čœä¸€æą¤ lo. Phew. Sweat lo..

Luckily today I got positive feedbacks. Just that I need to improve on my wrapping, it seems a bit too big. And I can't keep my avocado slices on the top of sushi and tend to drop when we take with chopsticks. Nevertheless, I had fun, had a wonderful dinner and I shall attempt again soon.

Dragon Roll Sushi (reference from Justonecookbook)
Sushi Rice, about 3 cups. Refer to here
1/2 Cucumber, sliced into strips
4 Nori sheets
2 Avocado
8 Prawn Tempura
Some Salad dressing

Notes: I used frozen Tempuras so I just deep fried and cool them. Cut ingredients.

Simple yet yummy & delish meal for kids


Decided to try the fried fish that was done by 1 of a FB fren. The looks of the fried fish makes me drool. And since I have the frozen fillets on the fridge so I tot of making them along to go with Egg Roll sushi. (I don't have to worry about cooking 1 more dish with gravy for them to go with rice. Yeah~)

I am using the method that I did ages ago, following this recipe. Today I am just using plain rice, wrapped over lettuce. So I have fish, veg and rice!! I am pretty sure I might make my lil boy keen to self-feed today.. (I am having so much problems getting him to self feed lo)



Verdict: It's yummy, crispy and not too thick batter.. Super yummy.. Could be a little more saltish though but it goes well with mayo and Chilli. As for self-feeding, my boy is happy to see his kiddy plate out. He fed the fish on his own but I have to help with the egg roll rice... 




Deep-Fried Fish Fillets (modified from Culinary Kitchenette)
My own marinate for fish:
3 Fillets, cut into thick slices
1Tbsp Sesame Oil
1Tbsp Lt Soy Sauce
Dash of Pepper
1tsp Sage
1tsp Tumeric
1tsp Garlic
1tsp Parsley

1) Marinate for at least 1 hour. Prepare batter

Batter:
3/4 Cup Plain Flour
 2Tbsp Cornflour
1/4tsp Baking Soda
1/4tsp Baking Powder
1/4tspSalt
180ml Water

1) Sift dry ingredients. Mix to smooth batter with water.
2) Coat with fillets and deep fry til golden brown
