Bake Along#47 - Cinnamon Sugar Donuts


When I saw this Bake-Along, I tell myself, I am so so definetely gonna join.. Why? Simply because my gal adores donuts. But it's those colouful donuts, full of sweets. Alamak. So I am thinking I could make a small amount of cinnamon sugar and a small amount of her favorites with this recipe and not having to worry about how to finish 1 recipe!!

I bake them in both mini donut pans and mini muffins pans. I always wonder, hw come my donuts can never brown nicely, always a pale yellow.. Why why why. Luckily I am coating them.. Sad =(
I used melted chocolate for the donut, added some sprinkles for my lil ones. Cinnamon sugar are for the 'older' ones.


I tried the donuts plain, just nice and very fragrant though I didn't add any vanilla essence. Feels like a mixture of bread and cake texture. Yummy.. Those with cinnamon sugar (I jus add a tsp of cinnamon powder to 2Tbsp sugar) is super fragrance. But I only made 4 cos it is so sinful to keep popping into my mouth. The balance, yes, topped with melted white choc and sprinkles for my gal & neighbor's kids... =)

Cinnamon Sugar Donut (adapted from Tasty Kitchen)
192g Plain Flour
1/8tsp Baking Soda
11/8tsp Baking Powder
1/4tsp Salt
1/8tspNutmeg *omit*
1/8tsp Cinnamon Powder *omit*
88.5ml + 1Tbsp Milk
1Tbsp Buttermilk *i replaced with milk*
75g Sugar *i use 60g*
56g Butter

1) Cream butter til light, add sugar gradually and cream til light.
2) Add egg, beat well. Add in flour mixture (with baking powder, baking soda) and milk alternately.
3) Mix til smooth, don't over mix. Bake at 170deg for 20-25mins

After a long break - Mini Baked Donuts


Been itching since I was back last Thursday, thinking what I wanna bake and remembered that I need to bake donuts for my gal as she really likes them. She always asked me to get 1 from the bakery near her school everyday when I fetch her from school. Seriously, I didn't really liked that. First, it is deep-fried and you don't know hw many times they will reuse the oil. Secondly, it cost $1+ for a donut, but it is the normal standard size you see from outside. But still, as you bake at home and buy the ingredients, you know very well it is still cheaper and HEALTHIER to make your own.

So I was searching for a few version and today I decided to try this recipe from Angela as it is using pancake batter so it should be quite fail-proof. It is very simple to mix, and you don't even need a mixer. You practically weigh the dry ingredients, mix a little then add the wet ingredients 1 by 1 and you whisk it well. Rest it for 15-30mins and you can preheat the oven and bake them. And yes, I over the 30mins as I was playing games on iPad. I left it for almost 45mins. So my end donuts, it is very chubby!!

I managed to yield 12 mini chubby donuts, and the taste is like mini pancake donuts to me. Soft and not too dry. I gave 4 away and give the kids 1 each for snacks and supper. Hubby had 1 and I am keeping 2 for tml to test how the donut can stay soft and moist. =)

Mini Baked Donuts (adapted from CookBakeLove)
150g Self-Raising
3Tbsp Sugar
90-100ml Milk *I use 100ml*
1tsp Olive/Veg Oil
1/4tsp Vanilla Extract
1 Egg

1) Put dry ingredients in mixing bowl. Mix.
2) Add wet ingredients & mix well. Rest 15-30mins
3) Bake at 190deg for 8-10min

Cheat Version - Donut


Over the weekends, I went for some retail therapy to cheer myself, sponsored by hubby and I bought a donut pan as my gal loves to eat anything that is in a shape of donut. Bread, cakes or anything. With that colorful sprinkles, that will blow her away. 

So, I was browsing online for some recipes and came across this - Apple Cake/Muffin by ReeseKitchen and my sour gold kiwi immediately came to my mind. Ha~ I decided to replace the apple with kiwi, used my donut pan and then coat with melted choc, colorful sprinkles to blow my gal away.


After baking them, I was kinda lazy to melt choc but the kiwi really taste too sourish for me. No choice, the choc have to come out. So I dip the top halve of the donut in the choc, sprinkles the colorful sprinkles. Now it is sitting in the fridge to set. 

Overall, the choc complements the sour kiwi, taste good too. As for the cake, maybe my skill not so good, it is soft and moist but not good yet, in my view. But overall, my gal loves it... 

Kiwi Cake/Donut (adapted from ReeseKitchen)
2 eggs
60g sugar *i use 45g*
1 tsp ovelette / emulsifier *i omit*
130g cake flour / plain flour
1/2 tsp baking powder
150g apple, peeled and purée *i use 1 kiwi, chopped, approx 90g*
70ml corn oil

Melted Choc
30g chocolate chips
30ml milk
10g butter


1) Beat eggs and sugar til ribbon stage
2) Sift in flour and baking powder
3) Add in kiwi and oil mixture and mix well
4) Scoop into pan and bake at 180deg for 15mins, cooled
5) melt all the above for dip, bring mini cakes and dip, put sprinkles on top and fridge to set
