Apple & Pork Ribs Soup

Hubby requested for Apple & Pork Ribs Soup. Been getting a few request for meal times, maybe I haven been cooking a lot of varieties. Hahaha~

Anyway I just roughly boil them, based on my own impression of what ingredients I see from those stall-bought or 三盅两件 version. I just grab a handful of the following ingredients with 4 big pieces of pork ribs and boil for 30-45mins.

Very flavourful and sweet soup from the red dates, longans and apples. Hubby gives thumbs up, my boy says very nice. Nice attempt. And we had steamed fish, baked nuggets, steam eggs and yummy veg from neighbor.

Apple & Pork Ribs Soup
1 Fuji Apple, cut into 6s
Handful of Red Dates
Handful of Dried Longan
Handful of 南杏北杏
Handful of 枸杞子
4pc of Pork Ribs (big cut)
800-1000ml water
Salt to taste

1) Wash pork ribs and bring to boil slightly in a pot of water. Wash and drain.
2) Cut apples, wash all the above ingredients and put aside.
3) Fill pot with water, add all ingredients except 枸杞子 and boil til apples and pork ribs are soft. Add 枸杞子last and boil a while, add salt to taste.

Cooling drink in this hazy weather

Due to the fire in Imdonesia, once again we are experiencing the bad hazy days.. This time round, it is quite bad and last night the haze was as high as 152 by night time. Today, it started off at 100 odd and came up progressively to 120++ as the days goes. Really bad bad for the old people and children. Dear all, please do refrain from a lot of outdoor activities, more water, vitamin C and more rest.

I remembered I read somewhere that white fungus is good for lungs, and since I still have 1 more china pear at home. I decided to brew it with white fungus, red dates, nan bei xing & rock sugar. I came up with my own concoction and simply put them together.

I am sharing this recipe here as it is easy to make and you can have it chilled or warm or room temp. Good for a hazy and hot day.

China Pear w/White Fungus
1-2 Dried White Fungus, soaked til expand and soft
Handful of Red Dates, approx 12-15 pcs
1 China Pear, cut
1 Soup Spoon of Nan Bei Xing
Rock Sugar to taste
3 Cup Water

1) Soak hits fungus til soften and expand. Cut away dirty parts, remaining cut into smaller pieces so you can also eat. (Eating it is better)
2) Wash all ingredients, drain and put into pot. Add 3 Cups of water.
3) Bring to boil and simmer for 20-30mins til pear soften. Serve as per preference.

Cough Remedy - China Pear w/Nan Bei Xing *edited June 15

My son has been coughing non-stop since last week, Thursday I think. The medicine from the GP doesn't work and I just brought him again to GP yday but I just feel that the phlegm is still a lot. Too bad that he doesn't know how to spit out thus he is taking ages to recover.

Happen to chanced upon the china pear at NTUC today and so hubby asked to buy and brew some for him. I browse the net to search for the recipe and to see if I can boil it, instead of steaming it. Ultimately all the recipes seems to be steaming but I still went ahead to boil it. It took me about 30mins for that small 1/2 cup of goodness.

China Pear w/Nan Bei Xing
1 China Pear
1 Spoonful Nan Bei Xing
1-2 small pc of Rock Sugar
1 Cup Water

1) Wash and cut pear. Put all ingredients and bring to boil.
2) Simmer for 20-30mins til pear soften. Serve warm.
