Rainbow. Cupcakes - Children Playdate



Today's play date ends our June holiday. Time flies and next week they are going back to school. My girlfriend is so nice to host the lunchie and baking session at her place. And my job, to find a recipe that is simple and do not require any mixer of any kind. 

I came across this smile recipe, did a trial and it taste ok. Just tt a bit drier as I over mix slightly when adding the colourings. We did the batter and let the children mix in the colourings. They piped in the coloured batter and had so much fun.

I just did a 'anyhow' cream cheese frosting with cream cheese, butter and vanilla extract. They piped, top with sprinkles, choc chips and mini cookies. OMG, they had so much fun decorating. All couldn't resist and had 1 Cuppies straight after they are done.

Love the mix of the colours. 


Vanilla Cupcake (adapted from Lovelyandloving)
*I did 1.5x of the recipe*
180g Self Raising Flour
180g Butter
40g Sugar (I reduce from 180g)
3g Baking Powder
2tsp Vanilla Extract
3 Eggs

1) All into mixing bowl, mix til no more bits of butter.
2) Divide into 7 bowls, Orange, Yellow, Green, Blue, Purple, Pink & Blue. 
3) Fill up 3/4 full, bake at 160deg for 20mins.
4) Cool the cupcakes before decorating them.

Basic White Loaf


This is my 2nd time using this recipe. I liked it cos it is without egg and soft soft bread. The first time I was us in my BM but it can't knead properly anymore. So I transfer the dough to my KA and transfer back to the BM to bake. Really nice looking loaf but too busy to take pic and blog about it.

Today I am using the old way I used to, KA to knead then proof then shaped on my own. Been a while since I do that. Still prefer my BM cos no need to wash up so many stuff. Haha. Been pampered til lazy hor?

Today I make 3 mini loaf, 1 long bun, 1 mini choc chip loaf and 1 plain loaf. Slice them into mini slices so it is jus nice for my kids when I give it to them. Not too much for them. Try this recipe, I really feel it is good using BM or the traditional way.

Basic White Loaf (adapted from KWGLS)
*halve recipe gets 500g dough*
180g Water/Milk
290g Bread Flour
20g Milk Powder (I replace Cake Flour)
6g Salt
20g Honey (I replace with sugar)
43g Butter
4g Yeast

1) I put as per sequence above except for water last. Mix til smooth dough and leave to proof for 1hr or til doubled.
2) Punch out and use 2x200g for the loaf and 100g for long bun. Leave for 2nd proof for 1hr.
3) Bake at 180deg for 30mins or til top are browned.

Fried Rice Sushi


Busy this June, busy and sick today.. Lazy to feed the kids, came up with an idea of wrapping my Fried a Rice as sushi, along with their favourite Deep-fried Wantons!

Yes, the rice doesn't require much seasoning as the seaweed is quite flavourful. And I added chopped spring onions, carrots, mushroom, ham & chicken meat. Packed with veg n meat, quite a wholesome meal already huh? 

Nonetheless, my happy kids finish up the food in a jiffy! Jus that a bit of rice grains on the floor. Sickly mummy managed to rest and sit beside them eating their dinner with satisfaction.

Fried Rice
*can be your choice of ingredients*
Spring onions, chopped
Carrots, chopped
Mushroom, chopped
Ham, chopped
Chicken meat, chopped
1 bowl of Rice
4 sheets of nori

1) Fry rice as per norm, ingredients 80% cooked then add rice. Season with pepper and 1tsp fish gravy.

2) Put cling wrap beneath, nori on top, scoop rice and wrap tightly, using cling wrap to wrap like candy. Leave aside.
3) Once all wrapped, cut into slices. Serve.
