Cheat Version Korean Kalbi Beef Riblets (Pressure Cook)


Decided to have some korean food tonight as craving for spicy kimchi tteobboki. Been a while I had them! Love it so much but ONLY I EAT THIS IN THE FAMILY! Kids, faster grow up and learn to eat spicy, you are losing out man! 😂

I did a simplified version using the Kalbi sauce. Just wan a simple and fuss-free cooking on a weekday night. Left it to pressurecook while I prepare my tteoboki. As well as preparing a simple meal for my grandma who dont take beef. 😋

Cheat Version Korean Kalbu Beef Ribs
1kg Beef riblets
1/2 Onions, slices
2 Carrots, chunks
6 clove of Garlic, slices
3Tbsp Korean Kalbi marinade
Water, enough to cover the ribs

1) Rinse and wash the riblets and set aside
2) Saute mode Hi, Drizzle in olive oil then sear ribs til browned
3) Stir in onion slices and mix well
4) Add in marinade liquid and enough water to at least cover the ribs half
5) Bring to a boil then change to Pressure mode Hi x 20mins and let it natural release for 30mins
6) Bring to a boil and add in carrot chunks. Pressure cook Hi x 1min
7) Serve with rice or lettuce wraps along with kimchi

Korean spicy honey pork ribs

 

Been craving for ribs and wanted to try it in korean style. Decided to try out if I can come up with something yummy! Lol 😂


Skewer some vegetable to go along with our ribs for tonite altho the kids are still having it with a serving of rice too! The butter mix goes so well with the vegetables! Surprisingly, I totally love the grill asparugus! So effortless to grill in 5mins and so crispy yet flavourful! Best part is that it is not dry out at all ❤️


OMG! The meat falls off so easily with only 25mins max of cooking time! I used to have to bake for 2hrs! Only bad is I should have marinate overnight! And the marinade is sweet with a hint of spice! Totally loving it ❤️



Korean spicy honey pork ribs
1 slab ribs, cut into halves to fit my Ninjafoodi
1Tbsp sesame oil
1Tbsp mirin
2.5Tbsp BBQ marinade, I use heinz
1Tbsp honey
1Tbsp parsley flakes
Black pepper

Grilled vegetables skewers
1tsp pink salt
20g butter
parsley glakes
garlic flakes
black pepper


1) Wash and rinse ribs
2) Mix above marinade in a bowl and pour in ziplock or container (for your ribs)
3) Place ribs in and rub marinade all over the ribs, marinate at least overnight
4) Place ribs on airfryer basker with 2cups of water and pressure cook HI x 15mins and keep marinade aside. Natural release 10mins
5) Brush ribs with marinade and grill for 8mins. 
6) Brush vegetable skewers with above mixture, grill hi for 5mins, flip and grill another 2 mins

Kimchi grilled beef

 

Love beef shabu and kimchi and remember that since I can grill/bake bulgogi beef, I decided to make some Kimchi beef! 


My go to kimchi packs, I always top it up in bundle which is cheaper! Adding it to many of my dishes, even porridge! 😂😂 Today i just added 1tbsp of gochujang and packet of kimci plus mirin and it is so flavouful! 


Experimenting egg and put in to bake beside the beef! (Pardon the pic as I put it beside the kids’ bulgogi beef) Gotten a quite cooked hardboiled instead of the soft boiled kind I wan. Probably try again with a lower temp or shorter duration. If you try it, do let me know how it turns out 😍


Kimchi grilled beef
approx 200g beef shabu, strips
1tbsp gochujang paste
1packet kimchi
1/2tbsp sesame oil
1tbsp mirin

2 eggs

1) Marinate the above for about 1-2hours
2) Grill for 10mins, stirring them in between to ensure even cooking
3) Serve along with an soft boil egg, bake 160deg x 8mins

Bulgogi Chicken Skewers


The other round I make yakitori chicken, the kids and hub were all raving about it. Loved it so much as it is much juicier than the ‘authentic’ brand. 🙊


Today I am trying Bulgogi flavour as I like the sweet flavour that it brings out. Simple marinade like this makes my job easier. Yums! Briefly marinate and then adding some onions, capsicums and mushroom makes it a complete meal! 😋😋




Grill them for a short 15mins in total, serve along with rice and homemade furikake! Yummy!! Do give it a try and tell me what do you think. ☺️

Bulgogi Chicken Skewer
2 Chicken Breast, cut in cubes
1/3 onion, squares
1/2 capsicum, squares
2 King mushroom, round
2Tbsp Bulgogi sauce
1Tbsp Mirin
1Tbsp Sesame oil
Some black pepper

Skewers, soaked

1) Marinate the seasoning with chicken and leave it for at least 3 hours
2) Soak skewers for 30mins before using (Prevent splinters and easier to skewer the meat)
3) Save the marinate aside. Grill at 10mins, brush with leftover marinate and flip and brush again and grill another 5mins
4) Serve warm with rice with vegetables of your preference

Spicy Korean Kimchi Pork Lunchbox


Love korean food a lot as it is mostly spicy which is my favourite among all the taste! Always try to recreate as it is much cheaper and I can have a bigger portion! 🙊🙊


The other day saw this and went to try it! Its yummy but i feel that its nothing really that special to pay that amount just to eat my rice in a lunchbox! Been waiting to make them at home for myself! I added my favourite Shimeiji mushrooms too! 


After serving it in a lunchbox I found at home, shake it hard and good, it looks exactly like the one I had! Slurrpppp!! Shiok to max!! Sharing my simple recipe of the Korean Kimchi Spicy Pork with you! Hope you enjoy them as much as I do! 

Korean Kimchi Spicy Pork Lunchbox
1 plate Shabu Collar
3Tbsp BiBiGo Kimchi 
2Tbsp BiBiGo Pepper Paste
Dash of Korean Chillia Flakes
1/2 Onion
1/2 pkt Shimeiji mushroom
Some water 

1) Sautee Onion and Mushroom.
2) Add pepper paste and a bit of water. Add in kimchi and stir fry well.
3) Add in shabu collar piece by piece. And mix in well. Add a little bit more water if too dry. Serve warm!

Spicy Rice Cakes


I used to always buy those ready made rice cake sauce and keep them in my fridge. Always crave for them wheneever I am watching korean dramas.. After watching so many dramas and some korean cooking videos shared by friends or social media! I realised that Hot Pepper Paste can cook so many types of korean dishes, depending on how u mix them up! ❤️❤️

I use it to cook my ramen so i only buy those plain ramen from Korean mart at $0.70. Way cheaper than buying a pack of ramen. Kimchi fried rice, korean stews, rice cakes and so many! So today I am sharing my own Spicy rice cakes that I always cook when I crave for them!

I went to the Korean mart and got the fish cakes. Quite yummy. Its more to the sweet side which complement the spicy sauce. Above is a pic I found on google. Mine is plain, non vegetables version! $2.20 and comes with 5 sheets of the fish cake.


I am using the pepper paste and kimchi as above. Easily available from NTUC, korean marts or most of the supermarkets! My rice cakes are also from NTUC. All so easily available to buy! Pictures are from google!

Here’s my yummy lunch! And all it took is 15-20mins..


Spicy Rice Cakes
1/2 pkt rice cakes
2 sheets of fish cake, cut into rectangulars
1scoop Hot Pepper Paste
1scoop kimchi
500ml water, can add more if it dries up
1/2Tbsp anchovy powder

1) Bring water to boil in pot. Add anchovy powder.
2) Add hot pepper paste and stir dissolve them
3) Add rice cakes and fish cakes and let it simmer for 5-10mins
4) Add kimchi and mix well. Sprinkle some korean chilli flakes if u like it more spicy. Serve warm!

Korean SoyBean paste Chicken



Lately I have been exploring how to cook korean dishes at home. Then a friend passed me the Soybean paste so I tried to explore what can be cooked. Decided to go with stir fry chicken to go with hot piping rice for dinner today! I sort of ran thru the basic ingredients needed, commonly used were soybean paste, soy sauce, sugar, garlic, spring onions! I decided to make a small portion of marinate for the chicken slices.




Was surprise how it turns out! Its nice, great to go with a bowl of rice! Or even wrapping it with a slice of lettuce! A bit too strong flavour on its own! I think if i add water, some tofu slices to make into stew will taste good too! 

Do try this simple recipe and let me know! Definitely cheaper than grilling them in Korean restaurants! I hope I wont over-eat on my carbo today! Served with or without kimchi?





Korean SoyBean Paste Chicken (serve 3-4 pax)
Approx 2 chix breast fillet and 1 small portion chix thigh
2 stalk of spring onions
1 yellow onions
2-3 garlic
2 Tbsp Sesame oil
1 Tbsp Lt Soy Sauce
2 Tbsp Soybean Paste
2 pkts enoki mushroom
Water to add accordingly, bit at a time

1) Prepare all ingredients and mix them well. Leave it for 15mins.
2) Heat oil and pour everything inside. Add a bit of water so that it wont get burnt and mix them 
3) Stir fry them and add water if gets dry
4) Add enoki mushroom when chicken is 70-80% cooked
5) Fry until mushroom is cooked. Serve warm with a bowl of rice!

Korean Bimbimbap


Today my hubby threw me a Mission - Korean Bimbimbap! Wow, I have been wanting to try but then I always see the amount of preparation and decided to wait. Yes wait. The side dishes seems a lot of work to prep. Haha~
Today I didn't regret. My hubby gave thumbs up for it. He told me he actually lowers his standard as I mentioned I was worried. Heng ah! He says its so delicious. I made the side dishes - Spinach, Soy Bean sprouts, Egg strips, Spicy Chilli paste Mushroom & Chicken, Oyster Sauce Onion Pork.
For the Spinach and Soy Bean sprout, jus blanch and drain, add a bit of sesame, pepper and salt to taste. 

Lotsa of work, but I enjoyed. Then I use the ready Bimbimbap Sauce, drizzle a Tablespoon of Sesame Oil. And I am done. Yummy!

My kids had with Sesame oil only, served with Korean Ginseng Chix soup. Got the herbs packet from a Korean Mart at Befok Mall.

Anyohaseyo!! We are going korean tonight!


Watching too much korean drama and variety, it really make me drool for korean food. But eating korean in Singapore, some are overly priced so I decided to make my own, in my own way...

I bought ready-marinated meats from Cold storage, sweet pork belly marinate and spicy pork belly. Both meat taste good and tender, but the spicy version, not so spicy le.... Hahaha.. And it's so ex, nxt time should buy marinate and make more often at home! Ha~


I bought some Soybean paste with intention to make the Spicy Seafood stew, but then the person at Cold storage gave me wrong info la. She says that soybean paste is spicy but it is not at all. And to my anguish, my chilli powder expired so I anyhow and added sambal. Fusion hor? Taste good though, and I added an egg on top after it boils. The kids had Chix soup.

The pancake, i found the recipe online. The first piece I didn't add kimchi as it's for the kids and without experience, I didn't managed to flip well and it break into halves! I ended up cutting into smaller pieces since I need cut later too.. Taste not bad le, just that not crispy enough. The version that I followed, I omit chives, zucchini and green pepper. I used only the below ingredients and added some Crabsticks and prawns. 


Kimchi Pancake (adapted and changed slightly from Maangchi)
1/3Cup Flour
2/3Cup Water
1/2tsp salt
1/2Cup SpringOnions
2 Shrimps, chopped
2Tbsp Kimchi, chopped
1 Egg 

1) Mix flour, salt and water in a bowl. 
2) Add all ingredient and mix well. Heat pan with oil.
3) Pour batter and lower to medium fire. Let it cooked til 70% and pour beaten egg onto the pancake.
4) Once egg almost cooked, gently flip the pancake. Add oil if needed, as it is important if u wan the pancake to be crispy.
5) Pan fried both sides til golden brown.

Bulgogi Pork


Saw frens posting in Facebook of Korean BBQ, Bulgogi Chix & Pork. Wow~ I really crave for some. Seeing that I have balance shabu pork belly, I decided to just 'anyhow' fry some. Yes, ANYHOW!

I didn't marinate cos those shabu pork belly are thin slices of meat and I guess should be able to absorb the sauce marinate when I fry them. It taste yummy, not really spicy as the sauce says Hot & Spicy. A mild hint if spicy plus sweetness. I think both adult and children should be able to eat it.

It taste yummy when you eat it with plain rice. And I fry cabbage w/canned pork & prawns, ginger dark soy fish head for dinner as well. Ad I had more rice than usual. Hahah~ fulfilling lo.


Stir Fry Bulgogi Pork
1/2 Pack of Shabu Pork Belly
3Tbsp of Bulgogi Sauce
1/3 Carrot, strips
Garlic

1) Wash pork belly and drain.
2) Stir fry garlic til fragrant. Add carrots & pork belly and fry briefly. 
3) Add a bit of water and sauce then mix well. Cooked til pork is cooked. Serve warm.

Korean Glass Noodles (Chap Chae)


For the previous Korean fair from Cold Storage, my aunt got me pack of the Korean glass noodles and I haven been down to searching for recipe to cook them. And just so I saw a fren cooking it, it reminds me that my pack of noodles still sitting in the store, waiting to be 'expired'..

I googled a little, bought some bean sprouts, spring onions, cut some hotdogs & fishball strips, shrimps as ingredients to go along with it. I saw this recipe from Steamy Kitchen and found it real useful with the photo guides and clear instructions on how to cook. So here I go, having it as dinner today!


Verdict : yummy!! Not bad for 1st attempt. I added 2 tbsp of dark soy sauce for colour & 1tbsp of oyster sauce. Sugar is omit.. 
Chap Chae (adapted from Steamy Kitchen)
1/2 pound dried Korean sweet potato noodles
2 1/2 teaspoons sesame oil, divided
1 tablespoon cooking oil
3/4 cup thinly sliced onions *omit as I don't really eat onions*
2 carrots, cut into matchsticks *omit*
2 cloves garlic, finely minced
3 stalks green onions, cut into 1″ lengths
1/2 cup mushrooms, thinly sliced (shitake, wood ear) *replaced with white jap straw mushrooms*
1/2 lb spinach, washed well and drained *replace with beansprouts*
2 tablespoons soy sauce
2 teaspoons sugar *omit*
1 tablespoon sesame seeds
**add hotdogs n fish ball strips for the kids**
Fill a large pot with water and boil. When water is boiling, add the noodles and cook for 5 minutes. Immediately drain and rinse with cold water. Drain again and toss with only 1 tsp of the sesame oil. Use kitchen shears to cut noodles into shorter pieces, about 8 inches in length. Set aside.
In bowl, mix soy sauce & sugar together. Add the cooking oil in a wok or large saute pan on high heat and swirl to coat. When the cooking oil is hot but not smoking, fry onions and carrots, until just softened, about 1 minute. Add the garlic, green onions and mushrooms, fry 30 seconds. Then add the spinach, soy sauce, sugar and the noodles. Fry 2-3 minutes until the noodles are cooked through. Turn off heat, toss with sesame seeds and the remaining 1 1/2 tsp of sesame oil.
