Peanut Butter Jam Muffin


Saw this interesting recipe way earlier and decided to try them today! I love peanut butter and jam and was curious to know how would they taste! And also, seeing that it used peanut butter as part of the recipe, I am really really so intrigued to know! 


I am using this peanut butter spread, love how creamy and smooth this is. Always yummy with my overnight oats and bread slices! Just the right taste I want when I am craving peanut butter. The strawberry preserve I am using was gifted by my lovely collit who got her hub to bring back from Germany! So sweet of her! I love it so much as it is natural sweetness with a slight tangy, not like our store-bought ones so sweet! 

While baking them, smells so so good! The peanut butter smell makes me so hungry! They rises nicely and some had the jam exposed on the top. 


This is how soft it is! Hub had 2 at a go and the kids love it so much. Hub says sweetness is just nice and asked for more jam next round. This is gonna be another frequent bakes for us!  

Peanut Butter Jelly Muffins
Recipe from Cookidoo, makes 12)
70g unsalted butter
200g Peanut butter (smooth)
85g Light brown sugar (Used 70g)
1 Egg
115g Yogurt (Accidentally added 130g)
130g Milk (Reduce to 110g as over add yogurt)
1tsp Vanilla
1tsp Baking powder
1/2tsp Baking soda
170g Plain flour
Pinch of salt
150g Strawberry Jam (I didnt weigh, just put small teapoon in the middle batter)

1) Add butter, peanut butter and sugar - 15sec speed 4
2) Add the remaining ingredient, except strawberry jam - 10sec speed 4
3) Scrap down and mix again - 5sec speed 4
4) Fill cupcake case to half and make a hole in middle of batter and put teaspoon of jam
5) Cover top with more batter
6) Bake 180deg x 22mins

Pandan Chiffon



Baked Pandan chiffon early this morning as wanted to multi-task since I be going for facial during lunch time later. Wanted to eat lunch after back from work while working. 


Nicely browned, and love the smell when you bake with natural pandan extract. It smells so much fragrant when its baked with pandan leaves.

I think I didnt do a good job of folding them in this morning but thankfully it turns out well still. Not super fliffy but still moist and fragrant. Only thing is I think I would cut back a bit of sugar nxt round. 


Blending and using my strainer to get the juice out. And i mix it with coconut cream and fresh milk for a healthier version of it. Homebaked is always the best as you can adjust and modify the recipe to your own tastebuds and preference. 


All packed in boxes to bring to office to share with collits tomorrow. And leaving 1 at home for my family to snack, as well as packing them for lunchboxes tomorrow too. Took 1 container less and was saying that I didnt expect to have so much. Hub says ask me to leave the balance for him as he could finish them for me 😂 Must have smell so good. Go try it!

Pandan Chiffon Cake
Recipe from Cookidoo
Pandan Juice
100g Pandan leaves
250g Coconut water (i mixed 65ml coconut cream and top up balance with fresh milk)

Cake
220g Sugar
7 Eggs, seperate yolk & white
200g Grapeseed oil
1tsp Vanilla paste
280g Self-raising flour
20g Cornflour
Pinch salt

1) Blend pandan leaves - 5sec speed 9
2) Add coconut water - 1min speed 8
3) Pour out and strain out the juice, set aside
4) Clean bowl & insert butterfly whisk, add yolks and 150g sugar - 5min speed 3.5
5) Add oil, vanilla, pandan juice - 5sec speed 3
6) Add 150g flour and cornflour - 6sec rv speed 2
7) Add remaining flour - 10sec speed 2
8) In a clean bowl, insert butterfly whisk. Weigh 70g sugar
9) Add egg whites - 4min 37deg speed 3
10) Continue while adding sugar bit by bit - 3min 37deg speed 3
11) Slowly work in batches and add whipped whites to batter
12) Bake 40-45mins at 180deg

Banana Muffins


Today decided to bake this Banana Muffins for school snackbox. Have bookmarked a while as am curious how it would taste baking with wheat flour. Sounds healthier to me in a way. 😂

The aroma of the cinnamon and nutmeg, even before sending to the oven smells so good. Already very excited to see the end products.


Waited patiently for it to cool down and Hub happen to have 1 for his tea break, just in time. I love such soft n fluffy bakes when all it took is less than 5mins to prep and send to oven. Can you see how soft it is? 


This is the flour I used. It says Super fine wheat flour. Shall explore more recipe using this flour and see what difference it makes. 

My firstborn came home and had 1 too. She is surprised how can muffins be so soft. Try it. 

Banana Muffins
Recipe from Cookidoo
1.5oz Butter
4.5oz Wheat flour
1.5oz Sugar
1.5tsp Baking powder
Pinch of salt
1 Egg
2oz Milk
5oz Banana (approx 2 banana)
1/4tsp Cinnamon powder
1/4tsp Nutmeg powder
Rolled oats & almonds bits for toppings

1) Add all dry ingredients and butter - Turbo 1sec x 4 times
2) Add in balance ingredients - Mix 6sec speed 5
3) Fill liners 2/3 full, sprinkle with toppings
4) Bake at 180deg for 25mins

Traditional Sponge Cake


Today was impromptu bake as was planning for a trip to JB. End up plan was postpone, as such decided to bake and prep something for youngest classroom snack.

Saw this recipe a while back and bookmarked it. Instead of baking full recipe for a 6inch cake, I made them into small cupcake sizes and topped with his favourite oreo bits. 


The inside was soft and fluffy. But had a small small amount of flour bits as I was lazy to sift the flour. The sweetness was just nice and good to maintain as it is. Probably the next round I will be hardworking and sift my flour 😂 Definitely a keeper!

Traditional Sponge Cake
Recipe from Cookidoo, halve recipe
2 Eggs
55g Sugar
55g Cake flour
15g Milk
15g Oil
1tsp Vanilla paste
1) Add eggs and sugar - Insert butterfly whisk, 10mins, 50deg, Speed 3.5
2) Add in sifted flour - 20sec speed 2, reverse blade once the flour is added in
3) Add in milk + oil mixture - 15sec speed 2
4) Fill cupcake cases 3/4 full and add toppings (optional)
5) Bake 170deg x 15mins

White Chocolate Chips Chewy Cookies - 2 styles


Today do not need to bake classroom snack as not sending youngest to school. So decided try making some matcha white chocolate cookies for firstborn. Have bookmarked this cookidoo recipe and planning to modify by adding some matcha powder to them. 

Thinking of trying with half the dough as youngest wont be able to try if I baked a full batch of matcha flavours.



This is how thin n crispy the cookies are. It is slight chewy with a bit of crunch. Overall i would says its quite fragrant and sweetness can be slightly reduced a bit more. The white chocolate chips added some sweetness to the taste of the cookies as well!


Added about 1.5tsp of matcha powder to the remaining dough after i scoop out half on the baking tray. Using the thermomix to mix the powder in for me in 20seconds. Very well mixed! This is how it looks like cross section. I would say the matcha flavour is not overly strong yet with a light matcha fragrant. And as I mentioned earlier, I would further reduced the sugar for this recipe. 

I actually reduced the white sugar and wanted to do the same for the brown as well. Accidentally poured in the amount called for 😂 This recipe is fast, just put all ingredients together, except for the chocolate chips, a quick 30sec and dough is ready. Another 20sec to mix in the chocolate chips! Nothing more to complain about!! 

White Chocolate Chips Chewy Cookies
Recipe from Cookidoo
120g Butter
100g Sugar (reduced to 80g)
80g Brown sugar (can be reduced to 60g)
1 egg
250g Plain flour
1tsp vanilla paste
1tsp baking soda
pinch of salt
100g white chocolate chips
1.5Tbsp Matcha powder (optional)

1) Put all ingredients in, except chocolate chips and matcha powder - 30sec speed 5
2) Add in chocolate chips or toppings of your choice - 20sec speed 3
3) Take out half batter, and add matcha powder to remaining dough in mixing bowl - 20sec Speed 3
4) Bake them with spacing as they will spread, 170deg x 15mins
5) Cool in tray for 10mins before removing them to cool further

Matcha Granola Muffins


Today i venture and decided to make this for my firstborn. Have seen this recipe previously and very intrigued to try out as it seems to be a low calories bake, without the use of flour. It uses banana to bind the ingredients together and i was keeping fingers crossed when i see it rises slightly while baking them.


I topped some with balanced banana slices, and some i experiment with white chocolate chips, leaving some original without toppings. 

The inside is slightly moist with a bit of crunch from the granola. Its a very interesting texture. The faint flavour of the matcha, not too overwhelming too! I love it.

Luckily firstborn love it too and says gonna have it for breakfast already! Me personally enjoyed it and luckily it passed hub’s fussy tastebud too as he always ‘failed’ my healthy bakes 😂

Do try it, its a very straightforward recipe. Just dumped all in and blend then throw in the oven already!

Matcha Granola Muffin
Recipe from cookidoo, with slight adjustment
9oz granola (i used matcha granola)
2 large eggs
8oz banana
2tbsp matcha powder
3oz brown sugar (i think can reduce 2.5oz)
3oz coconut oil
1tsp vanilla
1/2tsp salt
11/2tsp baking powder

1) Put all ingredients in - 20sec speed 6.5
2) Pour batter into cupcake cases and bake 20mins x 180deg

Vanilla Madelines (Thermomix)

Today used cookidoo recipe to bake these lovely vanilla madelines for school. Whole house smells so nice while they are baking in the oven.

Back and resume routine, trying hard to go with my initial idea of reducing processed food as much as I can in their daily meals, and if possible for school snack/recess boxes.


I put balance batter into my minu donut pan as I wan to bake them all at a go. Didnt had time to oiled the pan, luckily all came out easily. 



They are buttery and soft. Smells great and goes well with my cup of coffee. Its so addictive that you cant stop at 1, even hub is complaining. ❤️ Recipe link is here

Vanilla Madelines (From cookidoo)
3.5oz butter, cube
2 eggs
3.5oz sugar (i reduced to 2oz)
3.5oz plain flour
1/2 tsp baking powder
1/4 tsp vanilla paste
pinch of salf

1. Melt butter, 3mins 250F speed 1
Remove n set aside. Use it to oil pan and fridge til needed
2. Put in butterfly whisk. Add sugar, eggs, vanilla, 1min speed 3.5
3. Add flour, baking powder, salt, 5sec speed 5
4. Add in melted butter, 10 sec speed 3.5
Repeat 1more time
5. Pour batter into bowl n cling wrap. Chill for 1hr
6. Put 1 sponnful batter into madeline pan. Baked for 10-12mins 180deg

Chocolate Muffins - Thermomix


Needed a quick break to destress before I sit down to study with my secondborn. Scroll thru my saved bookmarks and decided on baking these! 


Very easy to put together after simply melting the butter, jus dump all ingredients in to mix 5seconds. Another quick 5sec mix to add in the chocolate chips and some pecans. Texture so soft and fluffy! 😋😋


Made some with sprinkles on top and the youngest was so thrilled! He took a peek and saw all the colourful sprinkles and says ‘Mummy I love you! You are the great COOKER!’ 😑😑😑 mehhh. 
 
Chocolate Muffins (adpated with slight modifications from here)
Makes 12 
170g Butter
255g Cake flour
1tsp Baking powder
1/2tsp Baking soda
180g Caster sugar
2 Eggs
2tsp Vanilla extract
200g Sour cream

Toppings: Chocolate chips or up to your preferene

1) Melt butter - 2mins/60deg/rv sp 2
2) Add above ingredients except toppings - 5sec/sp5
3) Add in toppings - 5sec/sp5
4) Bake in preheated oven 180deg x20mins or til skewer comes out clean

Double chocolate chips muffins II


Using another recipe that I bookmarked recently. The method seems easy and straightforward too, only setback is I always lazy to melt chocolate! Hahaha.. 

Decided to bring my butt to work so that the kids can bring to school for snack break on Tuesday. I topped 6 of them with banana slices and 6 with peppermint chunks. Need to use up my ripe bananas too! Heee.. 


The smell from baking these while I am washing up and preparing my ingredients for dinner is amazing! So therapeutic! I love the smell of baking ❤️❤️


OMG!! So so so rich n moist! Super love the rich chocolate taste! TRY IT!!!



Double chocolate muffins (adapted from BiggerBolderBaking)
71g Plain four
37g Cocoa powder
1/2tsp Baking powder
1/4tsp Salt
115g Brown sugar
2 eggs
71g Yogurt
115g Oil
1tsp Vanilla extract
115g semi sweet choc, melted
some choc chips to mix in

1) Melt chocolate and let it cool a bit
2) Set dry ingredients in a bowl
3) Stir sugar, eggs, yogurt, vanilla and oil into melted chocolate
4) Mix in dry ingredients and then chocolate chips, do not overmix
5) Scoop almost full and top with more toppings of your choice
6) Bake at 180-200deg x25mins

Creamcheese Chiffon Cupcake


Need to use up some balance creamcheese so decided to bake creamcheese chiffon cupcakes for snacks. It smells so yummy!! Love them! 


Its so soft but the top i think can bake slightly more brown to be drier! Esp in this weather, it will be more lasting in room temp if its drier. Love the mild chese taste in each cupcakes!! 



I filled them jus below the brim slightly and they rise so beautifully in the oven, no overflow. And when they cool, jus sink at the brim of the cupcakes! Lovely!! Pls try this recipe out! Super love the taste n texture! 

Creamcheese Chiffon Cakes (adapted from BlessedHomeMaker)
(A) 
60ml Milk
40g Creamchseese
25g Butter

4 yolks
65g Cake flour

(B) 
4 Whites
70g Sugar
1tsp Lemon juice

1) Melt (A) over double-boiled method and stir til creamy.
2) Add in yolks and mix well
3) Fold in flour til no lumps
4) Beat (B) til soft n glossy peaks
5) Fold in whites in 2-3 addition, pouring the mixture into whites for the last addition
6) Scoop and fill cupcake liners. Bake at 180-200deg for 30-45mins til top browned nicely

Blueberry Muffin


Lately a fren baked this blueberries muffins for us. I seldom eat cakes actually, only tasting some of my own bakes at time. But after I tried this muffin, I am blown away! My 3 kids also love them so much! And the fact that I was never a fruits person, I even ate the blueberries!! Such a wonderful way to ‘bluff’ myself into having berries! 

Immediately asked for the recipe, and was instructed by my gal to add choc chips. So my mission to bake them at home starts! I replace the plain flour with self raising flour and being kiasu, i added 1/2 tsp of baking powder as the original recipe calls for 2tsp of baking powder.

I think I could have fill a little too much batter so most of then exploded! So not pretty!! Kept 5 for myself and 6 to my neighbours. They said it was yummy after trying! I was curious how it would be, especially the texture!!!

I actually mixed up the steps from original recipes and was quite worried it will not come out well! My neighbour assurance gives me some confidence as they always give me honest comments! So now i can stop worrying and try 1 later! 


Immediately cut up 1 to try after dinner! I need to taste the texture and taste too! Hurray! Its soft, fluffy and not too sweet! Overall the tangy blueberries goes very well! I added choc chips as per my gal’s request. We both agree blueberries and choc chips doesnt gel that well! Thank god for the good texture and taste so it is still yummy to eat! Perhaps next round we should try choc chips or blueberries on its own. Yums!! Packed 1 each for them to bring to school for snack. Going to bake them again tml!


This serve to remind me that I have filled it up too full. Some of them exploded and become not pretty anymore! Haha~ Initial recipe makes 12 muffins, and I had 11! So I need to make a mental note that I need to divide them among 12! Try them!! 

Blueberries Muffins (adapted from OnceUponAChef)
115g Butter, room temp
180g Sugar
240g Self raising flour 
1/2tsp Baking powder
3/4tsp Salt
2 Eggs
120ml Milk
1tsp Vanilla paste

1.5punnet Blueberries

1) Cream butter and sugar til creamy
2) Put dry ingredients into 1 bowl, wet ingredients into another
3) Add dry then wet, alternating them in 3 additions, ending with dry ingredients.
*Do not overmix*
4) Fold in blueberries lightly
5) Sprinkle brown sugar on top
6)  Fill up 12 muffins cup and bake 180deg for 30-40mins til skewer comes out clean
7) Cool before storing

Banana Chocolate Muffins


Needed to clear my banana so decided to bake banana chocolate muffins for the kids as breakfast tml. They love having something else than their usual bread with butter spread. This will be a hit with them as it is chocolate base. Nothing will entice the kids as much as CHOCOLATE! 


This recipe is simple and uses 1 bowl. I mixed everything and all done in like 15mins. Send to the oven for a good 30-40mins while I went to cook my dinner! The smell of chocolate and banana is yummy! And hopefully it taste just as nice too!!



Omg! The exterior is a bit crusty but inside so soft and yum! Not overly sweet and the choco taste is rich enough!




Banana chocolate muffin (Adapted from DomesticGoddessWannabe)
2 ripe banana, mash
60ml oil
1 egg
187.5g Cake Flour
29.5g Cocoa powder
1tsp Baking Soda
1/2tsp Baking powder
100g Sugar

1) Mix banana, oil n egg well
2) Add in dry ingredients and mix well. Do not overmix.
3) Bake at 180deg for 20mins. Cool before storing.

Oreo Chiffon cupcakes



Using back this old recipe for my mini chiffon cupcakes lately! Easy to put together and so far the texture I love it. I did 2 versions, 1 oreo chiffon and 1 oreo chocolate chiffon. 




The cupcakes need to be filled just at the brim so that it will rise nicely during baking and collapse nicely after cooling.. love them! So nicely baked.. (for my standard la 🙊)

Since I have friends asking me about the recipe, I decided to write down what I added and change to the original recipe for new bakers. Hopefully can understand how to mix it up! 

Oreo Chiffon cupcakes
7-8pcs oreo, without cream crushed
7-8 oreo cream
4 egg yolks
115g milk
100g sugar
150g flour
75ml corn oil
1tsp baking soda
1tsp vanilla essence

4 whites
90g sugar

Oreo Chocolate Chiffon cupcakes
7-8pcs oreo, without cream crushed
7-8 oreo cream
4 egg yolks
115g chocolate milk
100g sugar
150g flour
1.5tbsp cocoa powder
75ml corn oil
1tsp baking soda

4 whites
90 sugar

1) Seperate oreo cookies and cream. Crush the cookies and leave aside.
2) Put ingredients for cake batter in a boil n whisk it well
3) Beat whites and sugar til stiff peaks
4) Fold in whites to batter in 2-3 addition then fold in crushed cookies
5) For cupcakes: scoop and fill to brim and top with a mini oreo or cracked oreo cookies chunk
For chiffon cake: Fill tin to almost 3/4 full
6) Bake at 160-180deg at 30mins for cupcakes and 50-60mins for cake or til top browned nicely

Pancake marble muffin



I bookmarked this recipe a while back as I wanna finish up a pack of pancake mix. Seeing that the marbled muffins seems like a great way to add in the kid’s lunchboxes! 


The texture is crispy on the outside and soft n fluffy on the inside. And plus point was that the pancake mix I had wasnt sweet and the recipe doesnt call for any sugar! My 3yo had 1 and asked for more!! 



Pancake marbled muffin (recipe from 辣妈Shania)
1 egg
110g milk
200g pancake mix
20g butter, melted

*take out 100g batter and add
10g cocoa powder
5g milk

1) Mix egg and milk well. Mix in pancake mix
2) Stir in melted butter
3) Scoop 100g batter and add cocoa powder and milk
4) Alternate scoops of cocoa and vanilla batter
5) Bake at 190deg for 15-20mins or til top browned nicely

Muffins - Choc chips & Mixed berries oat


Been thinking what to bake with the kids today as my #3 wasnt well. Slight fever and flu. So was kinda last min to do something with them today as #3 seems better slightly. So I look around for something simple and I have ingredients for. 

Bookmarked this Crazy Muffin recipes from Bigger Bolder Baking and its my to-do with the kids. As it is so versatile and uses vegetable oil, I dont have to worry about not stocking up on butter at home. Like as and when if I dont have breakfast for the next day, this seems like the perfect recipes to go to.. I do have other muffin recipes in my blog that I tried before but i like this better as it is moist and fragrant. 


I made my own Buttermilk too, with reference to the above baker. Adding lemon juice and sit rhe milk for 30min before using. It will curdle so just shake well before using! I think its the use of the baking soda, buttermilk combo that makes it so soft n fluffy. Just a mixing cup and a bowl, we are set to go! Actually if its not for the kids baking, I would have weigh everything inside the bowl and cup. 😂😂

Both kids enjoy rhe baking now as they do them from scratch. So today I let my gal weigh out 120ml of buttermilk as i purposely made it in the milk carton and sit it inside while I make my #3 go for his nap! It took us like 30mins to mix up and scoop the batter to cupcake cups. I halve the recipe so we can bake a smaller portion and make them again, into other variations! 


Today we made Chocolate chips and Mixed berries Oat. Botb smell lovely from baking and it taste yummy! Can u imagine the kids will like the mixed berries oat flavour?? 😂😂 Serve it with fruits for tea today! 😋

Crazy Muffins, recipe halve to make 8 small sized muffins (adapted from Bigger Bolder Baking)
Dry ingredients:
177g Plain Flour
90g Sugar
1tsp Baking Powder
1/4tsp Baking Soda
Pinch of salt

Wet ingredients:
1 Egg
120ml Buttermilk
60ml Vegetable oil
1tsp Vanilla Paste

Some chocolate chips, oat, frozen mixed berries

1) Whisk dry ingredients in mixing bowl to mix them up
2) Whisk wet ingredients til well mixed and pour into dry mixture
3) Using a spatula, mix until no dry streaks of flour can be seen. Take note not to overmix
4) Divide into 2 portion (can be more depending on how many variations you making). Add in toppings as desired.
5) Bake at 180deg for 20-25mins or til skewers inserted comes out clean.

Steam Cake


Today I tried making steam cake! Very simple version after baking the mini pancake balls. Yet to try them again to tweak the dryness of the pancakes so not sharing here yet. 

Shall share my steam cake experience with you all. My first attempt, the colour was too light cos I forgot to add flour to the batter meant for drawing but its still soft. Secondly I didnt tap the cuppies enough, I think. Lastly, I think my fire was too high. 




So my mama group urged me to try again. So I do it again! With some snapshots of the steps! And I rectify all the ‘errors’ that I think resulted in the pimply outlook and slightly driee texture! And yay, a smoother surface and its not so dry inside already! Hurray!! 




Another lunchbox recipe keeper!! ❤️❤️❤️


Japanese Steamed Cake (adapted from Miss bento)
150g Moringa Pancake Mix (1 of the 4 sachet in a pack)
100g Yogurt (I used Greek honey yogurt)
20g Sugar 
1Tbsp Cooking Oil
2 Eggs
2-3 drops Vanilla Essence

Batter to draw: Depending on what you plan to draw, jus scoop enough batter + 1-2 drops colourings and 1-2Tbsp Flour to mix)

1) Mix all ingredients til smooth
2) Scoop out batter drawing. Then pour batter to fill 1/3 of cupcake liner.
3) I hide a surprise - Hershey Baking Chocolate, fill up with batter til 2/3 full
4) Pipe drawing and on the fire for steaming the cupcakes
5) Knock the bottom of cupcakes on palm lightly then place in muffins cup to prevent too much expanding when steaming
5) Steam on very low heat for 12mins

Chocolate Muffins


Saw this easy and simple recipe from cookat and simply had to make them. Great for lunchbox treat for the 2 older kiddos. Took me barely 30mins to put them together. 

I dont know how to copy the exact link from facebook for this recipe so pls follow the link above to go to their facebook page and follow them for more interesting recipes.

I put 1 tiny teaspoon of nutella, worried about too much chocolate and heaty stuff. Tried and its yummy! When it is in the oven, kids couldnt stop asking about it. Try it!


Chocolate Muffin (Makes 11 mini muffins)
150g Butter
110g Sugar
110g Egg (approx 2 big eggs)
270g Cake Flour
40g Coco Powder
12g Baking Powder
120g Milk
1tsp vanilla paste

Nutella 
Some chocolate chips

1) I mix butter and sugar til combine
2) Add egg 1 by 1
3) Sift flour, coco powder & baking powder over mixture and mix well
4) Add milk and mix. Do not overMix
