Foccacia


Today decided to make foccacia for the youngest for recess, add on some fruits and nuggets will be an enjoyable meal for him. 


This is my first time baking these after so long. With some advise from my dear advisor fren, she taught me to cold retard them before baking, best overnight but I dont have enough time to cool them in the morning so i left it til evening to bake them. 

Didnt know how to poke the holes and just randomly deco with some onions and cherry tomatoes. Sprinkle some rosemary herbs and I FORGOT TO SPRINKLE SALT! 


The end result seems ok, acceptable to me. Exterior is crusty, inside is chewy. Just that probably it would be nicer with the sprinkling of salt as it is slightly. Probably when we serve it with the mains and dips, it would balance out the taste. 

Go try it! Youngest accepted the taste means APPROVED!
 
Foccacia
Recipe from Cookidoo
20g Olive Oil
400g Lukewarm water, i use room temp
1.5tsp Yeast
500g Bread Flour
2tsp salt

Toppings:
Tomatoes, Onion, herbs & drizzle of Olive oil

1) Mix oil, yeast, water - 5sec speed 3
2) Add flour and salt - 20sec speed 6 then knead 2mins
3) Place dough onto greased baking tin and let it proof 1hour
4) Lightly oil fingers n spread dough out to fit the baking tin and let it proof another 30mins (I let it proof in fridge til I am ready to bake n bring to rm temp for 30-45mins)
5) Deco with the toppings and drizzle the olive oil
6) Bake 35mins at 200deg

Chicken Floss


Today decided to make some floss with chicken breast that I have. Would be a good snack for school when make into a sandwich. 

I love homemade floss as you can control the ingredients and you know whats in it. But of cos the flaw is that it doesnt keep as long as store bought as no chemicals or preservatives are used when you make it at home. 


The kids enjoyed having it as an extra topping for their meals! ❤️

Chicken Floss 
Recipe by Cookidoo
2 Chicken Breast (i replaced with chicken)
10g Sesame oil
40g low sodium light soy sauce
40g sugar
20g Shaoxing wine
150g water

1) Add chicken, cut into strips, sesame oil and light soy sauce - 5mins 100deg rv spoon
2) Add remaining ingredients - 30mins varoma rv spoon
3) Shred 5sec speed4
4) Continue cook 40mins varoma speed 1
5) Lightly bake 150deg x 10mins, halfway stirring them to further dry them up

Traditional Sponge Cake


Today was impromptu bake as was planning for a trip to JB. End up plan was postpone, as such decided to bake and prep something for youngest classroom snack.

Saw this recipe a while back and bookmarked it. Instead of baking full recipe for a 6inch cake, I made them into small cupcake sizes and topped with his favourite oreo bits. 


The inside was soft and fluffy. But had a small small amount of flour bits as I was lazy to sift the flour. The sweetness was just nice and good to maintain as it is. Probably the next round I will be hardworking and sift my flour 😂 Definitely a keeper!

Traditional Sponge Cake
Recipe from Cookidoo, halve recipe
2 Eggs
55g Sugar
55g Cake flour
15g Milk
15g Oil
1tsp Vanilla paste
1) Add eggs and sugar - Insert butterfly whisk, 10mins, 50deg, Speed 3.5
2) Add in sifted flour - 20sec speed 2, reverse blade once the flour is added in
3) Add in milk + oil mixture - 15sec speed 2
4) Fill cupcake cases 3/4 full and add toppings (optional)
5) Bake 170deg x 15mins

Nutella Brownie w/Walnuts & Sea Salt chips


Been thinking what to do with my expiring nutella and decided to put into good use! Making a special brownie treat for my secondborn tutor! 


I overbaked slightly as I was busy with meal preps but luckily it is crusty at the sides and fudgy in the middle! This would go so well with a scoop of ice cream!

As I did not have any vanilla, I decided to load it with extra chocolate icecream! Lol! So rich, fudgy, chocolately! Great way to enjoy your Saturday dessert treat!  


Simple belated Teachers’ day gift for my secondborn tutor. Hope she likes it!

Nutella Brownie w/Walnut & Sea Salt Chips (adapted from Thermomix Truly Asian)
250g Nutella
30g dark choc chips
2 eggs
60g cake flour (I used plain flour)
pinch of salt
Extra choc chips or walnuts or desired toppings

1) Preheat oven to 180deg
2) Weigh using mixing bowl and add in all ingredients
3) Mix for 45secs, sp 5
4) Bake for 12mins x 160 deg (I lower as I am using Ninja foodi, if not maintain at 180deg)

Banana Walnut Cake - Thermomix


Been wanting to bake whenever I see my friends sharing their bakes. Today finally decided to drag my butt to bake! And it didnt disappoint me! 10mins is all it takes to make the batter and washing is so convinent! Jus a mixing bowl and a baking tin. Loving it!
 

Can u see how smooth the batter is? So nicely mixed up! And u knw its a good batter and feel nice about it when u sees it! OMG SMELL SO GOOD!!


I baked for 45-60mins, tenting it at the end to prevent the top from burning. End results is amazing! Soft and so fragrant this round! Youngest kept asking for bigger piece when I gave 2 aldy. Even secondborn loves it and go for second piece! 

Banana Walnut Cake (adapted from Cookidoo)
4 eggs
150g sugar
180g oil (i use olive oil)
250g banana
180g flour
1tsp baking powder
1tsp baking soda

1) Preheat oven to 150deg
2) Insert butterfly whisk. Add eggs, sugar, oil. 5mins, sp 3.5
3) Remove butterfly whisk. Add banana. 15sec, sp 5
4) Add flour, baking soda, baking powder. 45sec, sp 3
5) Pour batter out. Put walnut on top and bake at 150deg gor 45-60mins

Bentos, Breads and Creme Caramel





Posting up last 2 night's Bento for my gal, nothing fanciful. Just a simple meal with a little fun. Lunch was Macaroni with Fishball & Tomato on stick, Dinner was Rice Roll w/egg, Quail Egg, Spinach & Meat Patty, Dinner was Fried Rice, Pork Chop & Sautee Veg.
And then made the breads, pandan chiffon, huat kueh from premix & creme caramel all today. All for prayers and only dessert and bread for consumption. Roasted a slab of pork too but forgot to take pic. Hope it's yummy.
I replaced the coconut milk to fresh milk, it resulted in a more moist chiffon, definitely tastewise, with coconut milk is more fragrance. So next round, still coconut milk but lightly will play around with the amount of coconut milk with fresh milk perhaps.

Bento day

So inspired to make Bento meal for Irisa after being 'tempted' by AK in my Facebook group. Her 'pretty' meals for her girl really make me drool and so want to do it for Irisa. So I ordered some Bento cutter yesterday from Taobao, now waiting for them patiently and ran to Serangoon Nex - King & King Wong to get a Bear Bento Box, NTUC to get a PRINCESS Bento Box. Oh my, she is so SPOILT!! Anyway, I hope to be able to make a nicer creation when the cutter comes in. And i really need to wreck my brain for what side dishes to go along for her bento and also suitable for us, adults. Sounds like my backside itchy right??
These are the 2 Bento Boxes that I have gotten for her, the Bear if it last long enuf, I can double up for Rayshon when he can self-feed. Cute right? And why princess? Cos Irisa says she is a Princess!


Just a simple meal with meatballs w/corn & carrot, egg omelette, tomato w/potato served with porridge. So if you need the recipe of the steamed meatballs, here it is.
Steamed Meatballs
100g Minced Meat (Can be chix, pork or mixture)
1Tbsp Sesame Oil
1Tbsp Lt Sauce
1Tbsp Cornflour
Dash of pepper
Diced Carrots and frozen corns
Stir to mix well, add in carrots and corns.
Shaped into balls
Put on plate and steam for 5-10mins.
I hope I can come up with nicer Bento for her as i practise hard. Night people.
