Sea Salt Chocolate Tart w/Christmas Choux



 Actually wanna make some sea salt chocolate tart and last nite during a meeting, we were talking about christmas tree made up of choux! 


Then it somehow brought me thinking to combine them
both and also have a chance to try out fixing a christmas tree with my choux! 


I would prefer using chocolate callets as the hershey chips cant really set well. It is more like flowy chocolate filling when u bite it! Tastewise, it is good cos I am using the sea salt chips! So tasty with the bits of sea salt sprinkle on top of the tarts! 


I lightly assemble the choux on my 6” tart, filled with the chocolate filling. Carefully adding some toothpicks for those choux above to secure them! Wearing a santa hat for my tree! Ta-daaa~~ So cute!!!

Sea Salt Chocolate Filling
125ml Whipping cream
110g Hershey sea salt choc chip (works better with choc callet)
Sea salt for garnish

1) Put water in pot and put in steam rack. Saute mode Hi
2) Place pot with whipping cream on rack and wait for water to bring to boil
3) Add in chocolate chips, close lid and off power. Wait 3-5mins
4) Open and stir them well. Used as desired.

Chocolate Cake


Been trying out all the ‘quick-mix’ kind of cake recipes to see if its really yummy and good to have whenever we have a sugar crave to satisfy. 


The kind of erupted cake top! So funny.. 😂😂 It is chocolatey, moist and rich. Love! Just nice for a chocolate lover like myself. 😍

All it took me was 5mins to mix the batter and then another 5mins to wash up. Time to do my other chores and prepare for lunch! 😍 
 
Too Easy Chocolate Cake (adapted from Cookidoo)
120g Butter
2eggs
100g milk
1tsp vanilla extract
120g self raising flour (i used plain flour + 1tsp baking powder)
120g caster sugar (i used 100g)
30g cocoa powder
1tsp baking powder (i omit since i added above)

1) Preheat oven 180deg. Melt butter in mixing bowl - 2mins 60deg sp1
2) Add all remaining ingredients - 15sec, sp 5
3) Pour batter onto baking tray and bake for 30-35mins

Nutella Brownie w/Walnuts & Sea Salt chips


Been thinking what to do with my expiring nutella and decided to put into good use! Making a special brownie treat for my secondborn tutor! 


I overbaked slightly as I was busy with meal preps but luckily it is crusty at the sides and fudgy in the middle! This would go so well with a scoop of ice cream!

As I did not have any vanilla, I decided to load it with extra chocolate icecream! Lol! So rich, fudgy, chocolately! Great way to enjoy your Saturday dessert treat!  


Simple belated Teachers’ day gift for my secondborn tutor. Hope she likes it!

Nutella Brownie w/Walnut & Sea Salt Chips (adapted from Thermomix Truly Asian)
250g Nutella
30g dark choc chips
2 eggs
60g cake flour (I used plain flour)
pinch of salt
Extra choc chips or walnuts or desired toppings

1) Preheat oven to 180deg
2) Weigh using mixing bowl and add in all ingredients
3) Mix for 45secs, sp 5
4) Bake for 12mins x 160 deg (I lower as I am using Ninja foodi, if not maintain at 180deg)

Chocolate Chips Scones


Out for the morning til late afternoon and since dinner is gonna be an easy meal so I took some time off to make some scones for breakfast next day ❤️ 

Saw this recipe that a fren did and posted and it looks really good. Decided to make some to try. And since I wan to offer to the kids, I decided not to make earl grey but to add in some chocolate chips. 😋 All-time fav is chocolate for me! 


Texture is crunchy on the outside yet fluffy on the inside. Its not overly sweet and I can taste the bitterness of my dark choc chips! Love it!! 


Easily mix up the scones dough in a short 15mins or less. Chill for 30mins before cutting them up and bake. Great for impromptu tea time snack too! Do try it and come up with your own favourite flavours. 

 
Chocolate chips scones (adapted from korean scone boy)
200g Cake flour
30g Sugar
4g Baking powder
2g Salt
70g Butter 
60g Milk (added 1tsp homemade vanilla extract)

Chocolate chips, optional

1) Sieve flour and add in dry ingredients and give it a stir
2) Rub in butter til it resemblences breadcrumbs. 
3) Add in milk and mix it til it forms a dough. Cut into halve, stack on top and press down and repeat 2-3 more times. Chill for 30mins
4) Roll out chilled dough and cut into desired shapes. Brush with milk. Bake at 180deg x 20mins.
Serve with your favourite coffee, jam and butter ❤️

Double chocolate chips muffins II


Using another recipe that I bookmarked recently. The method seems easy and straightforward too, only setback is I always lazy to melt chocolate! Hahaha.. 

Decided to bring my butt to work so that the kids can bring to school for snack break on Tuesday. I topped 6 of them with banana slices and 6 with peppermint chunks. Need to use up my ripe bananas too! Heee.. 


The smell from baking these while I am washing up and preparing my ingredients for dinner is amazing! So therapeutic! I love the smell of baking ❤️❤️


OMG!! So so so rich n moist! Super love the rich chocolate taste! TRY IT!!!



Double chocolate muffins (adapted from BiggerBolderBaking)
71g Plain four
37g Cocoa powder
1/2tsp Baking powder
1/4tsp Salt
115g Brown sugar
2 eggs
71g Yogurt
115g Oil
1tsp Vanilla extract
115g semi sweet choc, melted
some choc chips to mix in

1) Melt chocolate and let it cool a bit
2) Set dry ingredients in a bowl
3) Stir sugar, eggs, yogurt, vanilla and oil into melted chocolate
4) Mix in dry ingredients and then chocolate chips, do not overmix
5) Scoop almost full and top with more toppings of your choice
6) Bake at 180-200deg x25mins

Chocolate Chiffon


Chocolate chiffon as my challenge to bake 1 that is moist and rich of chocolatey taste. So i google and saw this highly rave Moist Chocolate Chiffon. This one uses cocoa powder. And the liquid proportion is higher than usual chiffon. 

Close up of the chiffon. Its light, soft and fluffy. Taste seems very rich too! Gonna pass to a friend for taste test to see if it passes her expectations. For now, all is going to be packed for kids’ snacks and my breakfast tml. 

I am also going to try another recipe that uses melted chocolate. To compare texture and taste. Let’s see which is better. So stay tune! 

Chocolate Chiffon (adapted from BakeForHappyKids)
6 yolks
45g oil
180ml milk (i use soy milk)
100g cake flour (original calls for 80g plain flour + 20g cornflour)
25g cocoa powder
1/4tsp salt

6 whites
120g sugar

1) Beat whites and sugar to medium stiff meringue. Set aside.
2) Mix all yolk batter til smooth and well combined.
3) Fold in 1/3 of meringue, then continue with 1/3 more. Then pour batter into remaining meringue and fold gently.
4) Tap on countertop to break bubbles. Bake at 180deg for 60mins.

Banana Chocolate Muffins


Needed to clear my banana so decided to bake banana chocolate muffins for the kids as breakfast tml. They love having something else than their usual bread with butter spread. This will be a hit with them as it is chocolate base. Nothing will entice the kids as much as CHOCOLATE! 


This recipe is simple and uses 1 bowl. I mixed everything and all done in like 15mins. Send to the oven for a good 30-40mins while I went to cook my dinner! The smell of chocolate and banana is yummy! And hopefully it taste just as nice too!!



Omg! The exterior is a bit crusty but inside so soft and yum! Not overly sweet and the choco taste is rich enough!




Banana chocolate muffin (Adapted from DomesticGoddessWannabe)
2 ripe banana, mash
60ml oil
1 egg
187.5g Cake Flour
29.5g Cocoa powder
1tsp Baking Soda
1/2tsp Baking powder
100g Sugar

1) Mix banana, oil n egg well
2) Add in dry ingredients and mix well. Do not overmix.
3) Bake at 180deg for 20mins. Cool before storing.

Pancake marble muffin



I bookmarked this recipe a while back as I wanna finish up a pack of pancake mix. Seeing that the marbled muffins seems like a great way to add in the kid’s lunchboxes! 


The texture is crispy on the outside and soft n fluffy on the inside. And plus point was that the pancake mix I had wasnt sweet and the recipe doesnt call for any sugar! My 3yo had 1 and asked for more!! 



Pancake marbled muffin (recipe from 辣妈Shania)
1 egg
110g milk
200g pancake mix
20g butter, melted

*take out 100g batter and add
10g cocoa powder
5g milk

1) Mix egg and milk well. Mix in pancake mix
2) Stir in melted butter
3) Scoop 100g batter and add cocoa powder and milk
4) Alternate scoops of cocoa and vanilla batter
5) Bake at 190deg for 15-20mins or til top browned nicely

Chocolate Chip Cream Cheese Cake


Been sitting on my butt to bake as I really wan to bake something. But so busy with my learning materials and the kids’ schoolwork and all, and to top it off with an active 3yo-to-be, TIME is never enough! 

Today is my neighbour’s birthday! This call for a good reason! She always shower me with all her cooking, mee soto, curry, ayam masak and many more! Me always shower her ‘fats’ whenever I bake! But I haven been baking often lately. 🙊🙊

I googled and chances upon this recipe with whatever ingredients I have at home. So decided to try this interesting recipe today! Loved the cookie crust and the combination of the creamcheese tho a tad sweet, it is crunchy, chewy and soft. Yums! Perhaps with the addition of the chocolate chips, I will reduce the sugar in the creamcheese batter the next round. Reduce a bit of chocolates the next round and add a bit more sugar in the cookie dough and add some cinnamon? 🤔🤔


Can you see the layers?? I love it! Hub loves it so much and asked me why so little! Lol!! Ooppss, I baked a small 4” cake tin for own consumption cos we rarely have sweet tooth! But i think he likes chewy cookies so he totally fall in ❤️ with this one!! 


Have one too, my friends!! I will share the recipe source below! Serve it on its own, warm with a scoop of ice cream or have it chill! 

Chocolatw Chip Cream Cheese Cake (recipe adapted from LoveFromTheOven)
Bowl 1:
140g Plain flour
115g Sugar
1/2tsp Baking Powder
1/2tsp Baking Soda
1/4tsp Salt
1 Egg
5Tbsp Melted butter

Bowl 2:
150g Cream cheese
1 Egg
1tsp Vanilla paste
200g Icing Sugar

Toppings: Chocolate chips or any of your preference.

1) Put all dry ingredients in a bowl, sift. Add in melted butter and egg. Mix to form a soft dough.
2) Line baking tin and grease lightly. Press the dough onto the bottom of the tin. 
3) Beat creamcheese, egg, sugar and vanilla til smooth. 
4) Arrange some chocolate chunks on top of the cookie dough base. 
5) Pour the creamcheese batter on top and smooth it. Sprinkle chocolate chips on top.
6) Bake at 180deg for 30-40mins or til top is browned nicely. Serve warm or chill

Bueno & Crunchie Lollipop Ice Cream


Project II today was making the very simple lollipop ice cream with just 2 ingredients - Whipping/Heavy cream + chocolate of your choice! I went for Crunchie & Kinder Brueno! 😋😋😋


I am using with reference to this Video recipe which my fren tagged me on. Looks so delicious that cant be forgo. 


It took us less than 10mins to squash the chocolate and pour the cream in. I sit them in their wrapper, on a disposable cup, put in a plastic food wrapper before putting in to freezer for 2hrs before taking them out to ‘roll’ in the melted chocolate. Drop some sprinkles and we are done!


To be honest, I feel the taste is so so. Need loads of chocolate and lesser cream if you wan to have more ommphh.. still worth a try for some fun!

Ice Cream Logcake


Been thinking what to get for dessert for the christmas gathering this weekend. Deciding on fruits bowl, small logcake, making them myself and many more! Then I decided to make use of the ice cream we made on Thursday and Ice Cream Logcake it shall be! 

Using back an old recipe I used previously, I made my swissroll and cool them before coating with ice cream. Roll in cling and freeze again before coating it with whipped cream and deco it! Yes, I topped with my meringue christmas tree


Kids helped with making the swissroll today! Loads of fun as I slowly let them get involved in more of the preparation steps. The whipping of egg whites was hilarious as both felt arms aching after holding the handheld machine for a short while. 😂😂😂 妈妈是有练过的咯!


The logcake was small but full of my love to all my friends! And they love it too. Its not overly sweet paired with the homemade ice cream too. Been a while since i made ice cream cake or logcake, glad it turns out well! Along with my simple feast for the gathering.

Cake Box Chocolate Cookies


Saw this cakebox cookie recipe a while back and since I have a cake box ar home, kids says wanna do something they can do from start to end. And this only require simple stirring, so why not! 

There was a video recipe for 9 types of cookies. Of cos they choose smores cookies, but we dont have any marshmallow so we made our own cookies with hersheys, sprinkles, chocolate chips! Smell heavenly when baking!! The therapeutic smell I love that relieves you of all the bad thoughts of the day! 😂😂


Had so much fun from the mixing and all. The egg cracking was funny too cos its her 2nd time cracking an egg! Some laughter went into the process which is 1 of my goal to engage then with me for a short period each day when #3 is napping. Hope they enjoys and love what we do!



Happiest moment of baking/cooking - To savour the end results of hardwork! Tasting the yummy cookies! I personally love it. Its not those crispy type but with a crunch to it. Very rich chocolately taste too! Kids love it and says yummy! 🤞🏻🤞🏻


Cake Box Cookies (adapted from Tasty)
Green’s chocolate sponge cake box
120ml Oil
2 Eggs
4Tbsp Plain flour *optional, i added as its still a bit wet
Toppings (as desired) 

1) Mix all wet ingredients into mixing bowl. Scoop or make into ball shapes and put on baking tray. Make sure to give space for spreading during baking. Cool before storing in airtight containers

Mochi with Chocolate filling


This week we did Mochi. Lots of scolding cos mummy a bit OCD as they goes directly into our mouth after moulding them. 😂😂 Mainly the boy who got them most as he doesnt have some ‘flair’ in wrapping them and thought the bigger the chocolate filling the better for him to eat! 🙊🙊 Ended up with messy and unable to ‘close’ mochi and chocolate oozing all over. 🤦🏻‍♀️🤦🏻‍♀️

Nonetheless, they had some tries to wrap a couple, not much but like 3-4 of them to try out and have some experience of wrapping them. Most were unable to close up and seal. We only managed to wrap like 8-9 successful ones. We taste test after we done and left with 5 to keep for tea. 😬😬

I think we wrap a bit too thick, chocolate were huge. Dough could have been softer and chewier. Will definitely try them again. And both opt for their favourite colour - Green & Purple mochi.


Little boy helped to mix the dough before microwaving them. Was a bit tough to stir them well so i took over. But at least they know what it is all about to making a mochi. 


Happiest moment, having them over tea break with fruits on the sides! Helper love the taste of the chewy mochi and generous chocolate filling too! My boy pop the whole thing in his mouth and says the mochi exploded! Yums! My gal is more ‘fussy’ about her food and says the chocolate is yummy and delicious but could have do better with a thinner dough and softer in texture. 😂


Mochi, makes approx 8-9 balls (Mochi from Cookat)
100g Glutinous Rice Flour
50g Sugar
1tsp Salt
100ml hot water
Drops of colouring (optional) 

Chocolate Filling (from The Squishy Monster)
120ml  Whipping cream
115g Baking chocolate

1) Melt baking chocolate in warm whipping cream. Stir well to combine and put in freezer to chill for at least 2hrs. Cut into desired sizes and leave in fridge til needed.
2) Mix flour, sugar, salt in bowl. Add hot water and colourings and stir well. Microwave 1mins covered with cling wrap, remove and stir. Microwave again for 20-30seconds.
3) Remove dough and put on dusted baking paper. Roll and cut into appropriate sizes. Mould like a wanton wrapper and put chocolate cubes and pinch edges to seal.

Indonesian Cheesecake (Bolu Keju)


Got to know a fren thru some online shopping and we hit it off very well. Recently when I shared some if my bakes (thru whatsapp) and got to know that she have a sweet tooth and love pastries. Promised to bake her sometthing should we have a chance to meet up. A pity that she stay so far away if not we wld have companion for morning kopis at time. 

She told me that she missed a traditional indonesian cheesecake with a pic and I am clueless what is the name, where to find a recipe for it. 😂😂😂 But being secretive, i do not want to ask her as I thought it would be a pleasant surprise should i managed to find it thru web. So I began my search and found out that its actually called Bolu Keju. 

The recipe uses creaming method which is similar to making a spongecake. Gosh! 😱😱 My enemy when it comes to baking as I failed many times using this method. Either my cake comes out hard, middle uncooked or any other appearances that fails. So am kinda worried. And day before the meetup, I was busy with some sort so I didnt have time to bake ahead. But I jumped the gun and decided to do it the morning before we meet.

I tried and surprisingly, the sponge looks good! And i added an additional 15g coco powder as she is craving for the cake in chocolate flavour. (I couldnt find 1 in chocolate) I quickly bring out remaining ingredients to prep for the cream, and need to grate th cheddar on my own as the ntuc near me doesnt have any grated cheddar. 

Finally assembled and hopefully the buttercream taste well as I do not have any magarine at home. 🙏🏻🙏🏻🙏🏻 It’s my first time assembling, grating the cheese and it was quite messy. But tastewise, I personally love it! And its my first time that my sponge looks good! 😂😂

Pls try this recipe! You totally or should I say I have never seen this kind of cake being sold outside. 😋😋



Indoneisan Cheesecake aka Bolu Keju (adapted & modified slighty from maribermaindidapur)
4 Yolks
2 Eggs
50g Sugar
50g Cake Flour
15g Coco powder
10g Cornflour
50g Butter
1/2tsp Condensed Milk
1tsp Vanilla bean paste

Butter cream
75g Butter
25g Icing sugar
1tsp Vanilla bean paste

200g Grated Cheddar

1) Microwave butter, condensed milk for 20-30sec and leave aside
2) Cream yolks and egg, adding sugar gradually til multiply in volume
3) Turn to low speed, add in sifted dry ingredients 
4) Continue to beat at low speed, adding in oil mixture
5) Stop mixer and fold in gently to make sure all is mixed
6) Pour onto baking tin with baking paper and bake at 170deg for 30mins
7) Cool before slicing cake into halves
8) Using a whisk, whisk butter cream together til it turns pale whote
9) Spread buttercream on both halves of cake.
10) Grate 200g cheddar over both halves and stack 1 on top of the other.

Chocolate Chips/Cheese Castella


Last night I was searching for recipes to try then I chanced upon this Chocolate Chips recipe that someone made for her gal's P6 destress snack! So sweet of the mama to ask her P6 gal what would she like to eat, knowing that they are stressed with the upcoming exams! And such, I decided I wanna try it and destress myself from all the homework woes! 😂😂

Today I was lazy to set the Kitchenaid as I was watching my boy as I made the prep for the cake. So i manually beat my whites into peaks. And my boy was so fascinated with it. Can you see him? 😆😆

I slowly did 1 ingredients at a time and mix then up. The chocolate batter after adding in oil, was a bit effort when I mix them with milk & egg yolks. Did took me a while. (Maybe old liao, engine rusty)

The whites, gosh! The 10-15mins of beating it, almost break my right arm! But at least the whites was nicely whipped up to peaks. I quickly warm up my oven as I fold in the whites.. (As I type, I suddenly recall I wanna make some meringue cookies for my kiddos... 🤔🤔)
 

A quick idea came to mind to try using cheddar but as I wanted to let the kids bring to school, I make a half-half flavour. And to be honest, the cheese goes well with the chocolate! Slurrpppp.. Both myself and helper couldnt stop eating.. Try it!


Chocolate Chips/Cheese Castella (adapted from stephiews Blog)
5 Whites
65g Sugar

50g Vegetable Oil
25g Coco Powder
65g Cake Flour
90g Milk
5 Yolks

2 Slice of Cheddar
Some chocolate chips

1) Warm vegetable oil for 2 mins in microwave. (If you do not have microwave, you can warm slightly on stove top, til small bubbles want to form up and off heat)
2) Add coco powder and flour and mix well til no lump
3) Add milk and yolks and mix well til no lumps
4) Beat whites and add sugar gradually til soft glossy peaks
5) Add 1/3 of meringue to batter, then pour batter over to remaining meringue
6) Pour half batter on baking tin, then add cheddar slices (more if u want to have a whole cake with cheddar in between. I used 2 as I made a half-half portion). Cover with remaining batter
7) Bake at 170deg for 30-45mins til skewer comes out clean. Dont need to invert, cool in slightly ajar oven door.

Chocolate Muffins


Saw this easy and simple recipe from cookat and simply had to make them. Great for lunchbox treat for the 2 older kiddos. Took me barely 30mins to put them together. 

I dont know how to copy the exact link from facebook for this recipe so pls follow the link above to go to their facebook page and follow them for more interesting recipes.

I put 1 tiny teaspoon of nutella, worried about too much chocolate and heaty stuff. Tried and its yummy! When it is in the oven, kids couldnt stop asking about it. Try it!


Chocolate Muffin (Makes 11 mini muffins)
150g Butter
110g Sugar
110g Egg (approx 2 big eggs)
270g Cake Flour
40g Coco Powder
12g Baking Powder
120g Milk
1tsp vanilla paste

Nutella 
Some chocolate chips

1) I mix butter and sugar til combine
2) Add egg 1 by 1
3) Sift flour, coco powder & baking powder over mixture and mix well
4) Add milk and mix. Do not overMix
5) Scoop batter half-filled and put 1 teaspoon of nutella. Cover with batter and sprinkle chocolate chips
6) Bake at 180deg for 20-25mins

Chocolate Bluberries Muffins


Lately really got into the mood of rekindling my baking sparks. Maybe I couldnt do as much the big kids' lunchboxes so I wanna replace with some home-baked treats for them to bring to school. 

I bookmarked this simple and straightforward recipes and decided to add some cocoa powder, using only blueberries and chocolate chips for them. It took me like 15mins max to put them together and then another 30mins or so to bake them. All this done while 'eye-powering' my little toddler running to and forth in the background. 

Using only 2 bowls, all is done with minimum washing. I like the simple method and time-saving too. And usually I do my baking in the mornings or before the 2 older kids are home. Oh, afternoons are kept busy for them. Supervising daily homeworks, spellings or tests if there is.

Try this recipe. With the addition of cocoa powder and the tangy blueberries, its doesnt feel so sinful to eat. It goes well for the kids' lunchboxes next day too.

Chocolate Blueberries Muffins (modified slightly from DreamersLoft)
220g Cake Flour
30g Cocoa powder
120g Brown sugar
1.5tsp baking powder
1/2tsp salt
60g Butter, melted
250ml milk
1 egg

Handful of blueberries & chocolate chips

1) Put all dry ingredients together and mix them. Add some to blueberries and coat them.
2) Melt butter and cool. Add remaining wet ingredients and mix well.
3) Make a hole in middle of dry ingredients and pour all the wet ingredients in. Mix well but dont over mix. 
4) Add chocolate chips and blueberries and slightly stir in
5) Fill in cupcake liners and bake 170deg for 30mins or til skewer comes out clean.
