Cranberry, Chocolate Chips Bread


Today decided to bake a loaf of Softmeal & Chocolate bread, adding cranberry and chocolate chips to my chocolate loaf. Will share them with my neighbour so that kids can get to eat their fav chocolate bread.. Hee..

Am using this straight recipe from Grace again as it's looks so soft and good. Hoping that I wil achieve the same texture.. Mmm... Love the smell of bread and I get to smell twice today!!

Hub love the choc loaf, guessed my anyhow conversions from cup to grams work. Lol~ And it's the first he kept saying the chocolate bread is nice... (Pardon the pic as I was too tired to take it last nite and I left only 1 slice when I suddenly recalled I haven took a pic)

Cranberry, Chocolate Chips Bread (adapted from Taglicious)
180ml Milk
235g Bread flour
1.5Tbsp Cake Flour
1.5 Tbspunsweetened Cocoa powder
1.5 Tbsp sugar
1/3tsp salt
1Tbsp butter
1tsp active dry yeast 

Usual steps of using the breadmaker. Liquid, followed by flour then salt, sugar, butter at sides with yeast in center.

Softmeal Bread Loaf + 3 Hotdog Rolls


Did the same recipe again, this time doing Softmeal. Faster ask my neighbour helped to buy Wholemeal flour yday nite so I cld prepare the starter dough to bake them today... Woo.. Love it.

It is soft, and very yummy. My gal gobbled 1 hotdog roll for tea break to afternoon and say Yum!!

Soft White Bread (amended slightly from Taglicious)
*I 2x recipe for this batch*
Starter Dough - Mix 60g bread flour + 60g wholemeal flour + 120g water, cover tight n leave in fridge for 12hrs
200ml Milk
20g Honey
360g Bread Flour
30g Brown Sugar
3g Salt
5g Yeast
28g Butter
12g Milk Powder, omit

1) I poured ingredients as per above sequence, function 6 n leave the BM to work.
After 3hrs, my loaf is done. Cooled, sliced n store airtight.

Soft White Bread Loaf


Though I wasn't really satisfied with my loaf last night, the kids n hub even my mum claimed its nice. It taste good, but slightly harder the next morning. All of it was GONE! Ha~ Perhaps I haven gone back to the momentum of bread making..

Today I am using this Softmeal Bacon Bread recipe from Taglicious. I substitute the Wholemeal flour for the starter dough with all bread flour as I ran out of Wholemeal flour. I couldn't wait and I wanted to bake them today! So I called it Soft White bread. Hee...

Simple mixing of flour and water for starter dough, leave in fridge for 12hours and you can use it aldy. Followed the recipe closely and hoping that my bread turns out soft and fluffy too.. And indeed it does. I also made my own garlic spread today...


Super love the bread and I aldy prepared my starter for Softmeal version tml! Enjoying dinner now with yummy garlic bread...



Garlic Spread (reference to Simplyscratch)
1 Clove Garlic
2Tbsp Canola Butter
1tsp Oregano
1tsp Parsely

1) Wash and cut garlic in halves. Sprinkle Olive oil on garlic and baked in foil for 40mins.
2) Add all above ingredients and spread over bread. Bake til slightly browned and serve warmed.

Soft White Bread (amended slightly from Taglicious)
Starter Dough - Mix 60g bread flour + 60g water, cover tight n leave in fridge for 12hrs
100ml Milk
10g Honey
180g Bread Flour
20g Brown Sugar, I used 10g normal sugar
2g Salt
3g Yeast
14g Butter
6g Milk Powder, omit

1) I poured ingredients as per above sequence, function 6 n leave the BM to work.
After 3hrs, my loaf is done. Cooled, sliced n store airtight.

New Breadmaker!


After 'abusing' the Lenq Breadmaker that I gotten from groupon deal, it finally raise the white flag after 9 months. Been using it for around 2-3 times max per week.

And as my old one surrender, the new breadmaker craze is here. Now Q00 has this special deal at $70 with delivery to your house. The wait is no longer than 2 weeks and finally after arriving for 1 week, I open it up.

It is smaller than the old one, max of 450g dough.. My first bake is using the sweet bread recipe from the manual. Keeping my fingers crossed that it will turn out well. Hub says taste good but I still prefer the usual recipes I used to bake with. Think I stick to that or try other interesting recipe.

Sweet Bread Recipe (From Donlim BM Manual)
120ml Water, I replaced with milk
1 Egg
240g Bread Flour
3G Milk Poweder, omit
36g Sugar, I used 20g Honey
2g Salt
5g Yeast, I used 3g
16g Butter

I used Function 6, light crust, 450g bread. Add ingredients in above sequence and leave the BM to work.

Rainbow. Cupcakes - Children Playdate



Today's play date ends our June holiday. Time flies and next week they are going back to school. My girlfriend is so nice to host the lunchie and baking session at her place. And my job, to find a recipe that is simple and do not require any mixer of any kind. 

I came across this smile recipe, did a trial and it taste ok. Just tt a bit drier as I over mix slightly when adding the colourings. We did the batter and let the children mix in the colourings. They piped in the coloured batter and had so much fun.

I just did a 'anyhow' cream cheese frosting with cream cheese, butter and vanilla extract. They piped, top with sprinkles, choc chips and mini cookies. OMG, they had so much fun decorating. All couldn't resist and had 1 Cuppies straight after they are done.

Love the mix of the colours. 


Vanilla Cupcake (adapted from Lovelyandloving)
*I did 1.5x of the recipe*
180g Self Raising Flour
180g Butter
40g Sugar (I reduce from 180g)
3g Baking Powder
2tsp Vanilla Extract
3 Eggs

1) All into mixing bowl, mix til no more bits of butter.
2) Divide into 7 bowls, Orange, Yellow, Green, Blue, Purple, Pink & Blue. 
3) Fill up 3/4 full, bake at 160deg for 20mins.
4) Cool the cupcakes before decorating them.

Basic White Loaf


This is my 2nd time using this recipe. I liked it cos it is without egg and soft soft bread. The first time I was us in my BM but it can't knead properly anymore. So I transfer the dough to my KA and transfer back to the BM to bake. Really nice looking loaf but too busy to take pic and blog about it.

Today I am using the old way I used to, KA to knead then proof then shaped on my own. Been a while since I do that. Still prefer my BM cos no need to wash up so many stuff. Haha. Been pampered til lazy hor?

Today I make 3 mini loaf, 1 long bun, 1 mini choc chip loaf and 1 plain loaf. Slice them into mini slices so it is jus nice for my kids when I give it to them. Not too much for them. Try this recipe, I really feel it is good using BM or the traditional way.

Basic White Loaf (adapted from KWGLS)
*halve recipe gets 500g dough*
180g Water/Milk
290g Bread Flour
20g Milk Powder (I replace Cake Flour)
6g Salt
20g Honey (I replace with sugar)
43g Butter
4g Yeast

1) I put as per sequence above except for water last. Mix til smooth dough and leave to proof for 1hr or til doubled.
2) Punch out and use 2x200g for the loaf and 100g for long bun. Leave for 2nd proof for 1hr.
3) Bake at 180deg for 30mins or til top are browned.

Fried Rice Sushi


Busy this June, busy and sick today.. Lazy to feed the kids, came up with an idea of wrapping my Fried a Rice as sushi, along with their favourite Deep-fried Wantons!

Yes, the rice doesn't require much seasoning as the seaweed is quite flavourful. And I added chopped spring onions, carrots, mushroom, ham & chicken meat. Packed with veg n meat, quite a wholesome meal already huh? 

Nonetheless, my happy kids finish up the food in a jiffy! Jus that a bit of rice grains on the floor. Sickly mummy managed to rest and sit beside them eating their dinner with satisfaction.

Fried Rice
*can be your choice of ingredients*
Spring onions, chopped
Carrots, chopped
Mushroom, chopped
Ham, chopped
Chicken meat, chopped
1 bowl of Rice
4 sheets of nori

1) Fry rice as per norm, ingredients 80% cooked then add rice. Season with pepper and 1tsp fish gravy.

2) Put cling wrap beneath, nori on top, scoop rice and wrap tightly, using cling wrap to wrap like candy. Leave aside.
3) Once all wrapped, cut into slices. Serve.

Fritters AGAIN....


Decided to cook Fried Mee Tah Mak instead of soup style and was wondering what type of sides to go with. Realized that it's has been a while I made the fritters and I really crave to eat them with my chilli sauce... Yummy!!

Using my previous recipe, I used spinach, Crabsticks and prawns. I halve the recipe, still maintain 1 egg and substitute Plain Flour + Baking powder instead of Self-raising Flour for today's fritters. Glad it still turns out well.. 

Ended up my side becomes my Main star of dinner.... Mmmmmmm..

Happy Dumpling Festival


Time of the year again, to make my favourite Bak Chang. Loved the way the rice taste with its soft soft texture. Yummy..

This year I gonna wrap a few just to satisfy my crave cos grandma went home and I am left alone during the day with my kids. Gonna managed them and the chores with my wrapping etc. not gonna be easy but the thoughts of having to eat them after the hard work is rewarding..

I used back the same recipe, wrapped about 200g of rice. I got about 20ish dumplings which is more than enough for my little family. Bringing some this weekend for family gathering..

Sweet Potato Bread


Wow!! Been real busy... Lately my mum came over to stay temporarily as her new place is waiting for handover, renovation before she could shift in. Thus grandmother went back to her own house to give my mum space here.. Yes, new flats are SMALL...

As my mum is working, I am left alone with tons to do with 2 noti kids. Been so tiring that I didn't baked for almost 3 weeks! Finally after lazing, I decided to take my mum portion of the sweet potato that she asked me to steam, and bake Sweet Potato bread. 


This recipe using purple but I used the normal yellow potato here.. Hubby comment that bread is really soft and yummy... Great keeper and way to use up sweet potato too... 


Sweet Potato Bread (adapted from Blessed Homemaker)
150ml Water
1 Egg
400g Bread Flour
40g Sugar
3/4tsp Salt
2tsp Yeast
200g Yellow Sweet Potato
40g Butter

1) Put ingredients in above sequence, add butter after dough is form. Continue to knead after butter is added, into smooth dough. (I use bread maker, Menu 8:Dough function, and knead a total of 10-15mins, selecting Menu 1: Loaf Function)
2) Let the BM do the work and check 20mins before bread is done.
