Pork Cutlet (Airfried version)

 

Whats on midweek dinner? Pork cutlet served with potatoes wedges and refreshing mango salad. I am trying to go back to my salad diet so thinking hard what protein I can eat when the others can enjoy their meals. And since kids love wraps, I decided to go without rice tonight. 


All done in my Ninjafoodi tonite. No oily and grease from cooking the crispy pork cutlet. Goes so well with the tangy mango salad! ❤️ it! 


Honestly I really enjoyed making my healthy junk food aka ‘fried food’ in Ninjafoodi. So far it has never fails me and remains crispy. Less oil, healthier and also no grease in my kitchen. Now I can be relieved that when I shifted to my new place, my open concept kitchen is confirm a go go! ❤️


Pork Cutlet (Airfried version)
500g Pork Loin, slice
1Tbsp sesame oil
1Tbsp huatiao
2Tbsp light soy sauce
1Tbsp oyster sauce
1Tbsp 5-spice powder
Pepper
4-5clove garlic, thinly sliced

Coating: Beaten egg and cornflour

4 potatoes, thin strips
Parsley flakes
Truffle salt

1) Tenderise pork chop by using back of chopper 
2) Marinate pork chop with above seasoning for 2-3hours, preferably overnight
3) Coat porkchop with egg, then flour and place in airfryer basket. Spray oil. 
4) Aircrisp 180deg x10mins, flip and continue another 5mins
5) Put in potatoes and sprinkle seasoning. Spray oil and lightly toss
6) Bake 180deg x10mins. Toss and increase to 200deg x10mins. Toss again and aircrisp 200deg x5mins
7) Serve potatoes with Porkchops on wraps or choice of carbs

Curry Prawn Nuggets


Whats for dinner on a lazy saturday? Kids requested riceballs again so I decided to make some Curry prawn nuggets to go along with it.


I shaped them into little hearts to tell them Mummy loves you all so much. Hope they can taste my love n sweat in making them as they enjoy their dinner ❤️ 


Very easy and fuss free recipe. I hope you all will have fun making them too! 


Curry Prawn Nuggets
300g Shrimp paste
1tsp curry powder
1tsp parsley flakes
1tbsp panko crumbs
pinch of salt

Coating: 
egg and panko 

1) Marinate shrimp paste with above seasoning
2) Get ready the ingredients to coat and wet your hands (so it will be less stickier, you can use oil too)
3) Shape them, dip in beaten eggs then coat with panko crumbs
4) Lay on airfryer basket and brush some oil. Bake 180deg x15mins. Flip after 7-8mins and brush oil on the other side

Dark Chocolate Oreo Popcorn



Yippeee! Homemade popcorn! As fresh as it can be! 😋😋 Youngest saw the pack of crushed oreo crumbs and kept asking me what am i making. Then smell the popcorns popping and keep coming in, saying he wants to eat whats inside the 🥷 mehhhh~

I made a mistake by laying foil and I shld have jus used the pot and brush the pot with oil then put in the seeds. Instead of pouring oil over the seeds. Most of them cant pop, which I dunno if its a blessing cos I ended with a small bowl which is just nice for the 3 of them to share. (I read that too much oil, the popcorn cant pop) 


I used Dark chocolate and oreo crumbs. Taste so good as it is not overly sweet as store-bought ones. Love it so much that I gonna go get more seeds to make them over the weekends again ❤️ 

Dark chocolate oreo popcorns
handful of popcorn seeds (i assume thats the amt popped)
4 dark chocolate squares
Oreo crumbs

some oil to brush the pot

1) Brush the pot with oil (which shld be the proper way)
2) Pour in popcorn seeds
3) Bake 160deg x 10mins, checking on them every 3-5mins, opening the lid carefully
4) Once all popcorn are popped, remove from pot
5) Add some water and use Saute mode to bring it to boil, off it
6) Add chocolate squares and put in the pot of hot water and cover lid for 5mins
7) Drizzle chocolate over popcorn and add in oreo crumbs. Mix them well then enjoy!

Chicken Karage (Airfried)



Presenting a very simple meal tonite! I aircrisp store bought yam ring and did a simple stir up of vegetables & scallops, followed by kids’ all-time favourite - Chicken karage 😍

Simple seasoning to marinate the thigh meat before coating them with fried chicken powder. Lately kids have been enjoying their junk food in a slightly healthier version with our 🥷 Total love for it! 

 
Chicken Karage
2 boneless chicken leg, small chunks
1tbsp jap soy sauce
1tbsp mirin
Black pepper

Coating: Fried chicken powder

1) Marinate chicken chunks for 1hours
2) Coat chicken with powder and brush oil on them
3) Aircrisp 200deg x10mins, flip at last 3mins point

Mozerella Rice Balls


Initially planned to make something else with quinoa for the big kids after school snack. End up cos first time using pressure cook to make my quinoa, I only had enough for me, hub and the youngest. Ended up Hub suggested making rice balls for the kids!  

I remember I have some leftover jap rice from the Onigiri dinner. Decided to make mozerella rice balls for them! I have shared a video on how to wrap them up (pardon the view as I put my hp on the dish rack to video, my ‘photographer’ at school) ❤️ 


Simple and quick snack made by my Foodi! I paired with some mozerella sticks, wrap in popiah skin! Drizzle
some takoyaki ball sauce! Yums 😋

Mozerella Rice Balls
1 bowl japanese rice, added with 2Tbsp furikake
1 portion mozeralla, cut into small cubes
Panko

1) Put rice on plastic wrapper n press flat
2) Put a small cube of mozerella and close it. Twist wrapper tight n shape into a ball
3) Take out rice balls n coat with panko
4) Put on airfryer basker and brush some oil. Aircrisp 180-200deg for 10mins then flips again for another 5mins (monitor and adjust temp to avoid mozerella oozing out)

Quinoa & Cod salad


 What’s for lunch? Quick n heathy for today - Quinoa and Grilled cod ❤️ 


Didnt expect to cook my quinoa so effortless as I always boil them over stovetop. NOW, I can get my quinoa done and ready in 1min!! (excluding quick/natural release time, approx less than 5mins) So good! No more looking after stove! More healthy lunches then 💪🏻 

I paired it with cod fish today and some greens on the sides! I love cucumbers cos of the crunch and tomatoes for the extra anti-oxidants! What’s your lunch today? 😉

Quinoa + Cod fish Salad (for 1 pax)
1 cup quinoa, rinsed
1 cod steak, washed n pat dry

Greens of your choice, optional
Salad dressing

1) Saute mode: HI - Rinsed and saute quinoa in pot til its gives a nice fragrance (arnd 3-5mins)
2) Add water to 2cups mark
3) Place rack and put cod on top (Up to your preference to add a plate for cod or not, I prefer so that the fish liquid doesnt get to the quinoa)
4) Pressure cook mode HI x 1 min and natural release
5) Pour away fish liquid, brush teriyaki sauce and grill mode x 3mins
6) Serve with Quinoa ❤️

Crispy Enoki/Oyster Mushroom


Tonite is Onigiri night! Kids requested and it was a mad rush on a school day. Some food items also didnt managed to take pics. LOL! 


Best dish of the night was Crispy Enoki and Oyster mushroom ❤️ Didnt expect to nail it but still need some adjustments! And my gal almost finished all the truffle salt kale chips! My youngest whack 2 onigiri, at least tis makes my day! (after revising maths with my secondborn for 3 hrs!!!!) 😑😑


So I ran out of eggs so substitute with cornflour+milk mixture and surprisingly it works. So here I am sharing my humble recipe and pardon my crazy story above! I am so low batt aldy 😔😔

Hope you enjoy my mushroom recipe ❤️ 

Crispy enoki/oyster mushroom (sorry i dont have exact as I estimated the amount)
Approx 2 big sheets of Popiah skin, thin strips 
1 small pk of Enoki mushroom, lightly wash n pat dry
1 plate of Oyster mushroom, wash and squeeze dry

Coating:
1Tbsp Cornflour+4-5Tbsp milk, mix to a sticky consistency (i recommend replace with egg)
Panko+salt+parsley flakes mixture

1) Wrap enoki mushroom with popiah strips to secure
2) Dip in cornflour mix then dip in panko mix. Put in airfryer basket
3) Lightly dap some oil and aircrisp 180deg for 8-10mins, flipping at 4mins point and dap some oil. (monitor closely after 6mins to prevent burnt)
4) Repeat with oyster mushroom, tear in smaller pieces with same timing for aircrisping

Crispy Thai Style Seabass (Air Fried)


Was on a trial to try out the crispy seabass with my Ninjafoodi! Didnt expect it was a SUCCESS!! 

OH MY GOD! I didnt expect I can get crispy fish without deepfrying! And so crispy on the outside, meat on the inside still so juicy! 


一边白白的,一边金黄色的❤️❤️ And I NEED TO KEEP REPEAT-NO OILY KITCHEN as this really got me so EXCITED 😂😂

Crispy Thai Style Seabass (Air Fried)
1 Seabass, butterfly style (approx 500-600g
1tsp tumeric powder
1tsp pepper
1tsp salt
1tsp curry powder

Coating: Cornflour

Dipping sauce:
3 clove garlic, thin slice
2 chilli padi, cut
1 sprig coriander, chopped
1 lemongrass, chopped
3 tbsp thai fish sauce
2tbsp water
2 lime, juice

1) Season seabass with above seasoning for 30mins
2) Meanwhile, prepare the dipping sauce and put aside
3) Coat seabass with cornflour and lay flat in airfryer basket, skin face up
4) Brush top with cooking oil and aircrisp 200deg x20mins, increase to 220deg x10mins

Calamari Rings (Airfried)


Been thinking to make calamari rings as the kids love, especially #2. I specially added some wasbi to mayonaise as the dip. It goes so well together! 


No oil splatter and so easy to do it in my Ninjafoodi. Took 15mins per batch and easy to make!


Yummy 😘😘

Calamari Rings (Airfried)
2 Squids, cut into rings
Black pepper
Salt
Huatiao

Coating
1egg, beaten
Cornflour
Panko + parsley + salt

1) Marinate squid rings with black pepper, salt and huatiao for 30mins
2) Dip squid rings in flour then egg then panko mixture and put in airfryer basket
3) Brush lightly with oil and aircrisp 180deg x10mins, flip and brush oil, aircrisp another 3-4mins
4) Mix some mayo with wasabi and serve with calamari 

Red Bean Soup (Pressure cook)


Decided to add on a bowl of red bean soup after our weekly park outing. Today I steamed some dim sum prior to leaving the house so I dumped in the beans to cook in Ninjafoodi using pressure cooker mode ❤️


Jus leave it like that and I warm it up when serving, lightly blend it and add in my sago pearls. Yummy! ❤️

 Red Bean Soup (Pressure cook)
1bowl red bean, rinsed
6bowl water (use the same bowl as red bean)
100g sugar
pandan leaves
cornstarch
4Tbsp sago pearls

1) Put all ingredients except sago pearls into Ninjafoodi
2) Pressure cook in HI x 25mins, natural release
3) Bring a small pot of water to boil, add in sago pearls 
4) Once sago pearls turns partly translucent, off fire and cover pot for 10mins
5) Once red bean soup is ready, open lid and bring to a simmer and taste for sweetness
6) I blend it briefly and add in some cornstarch for a slightly thicker texture. Stir in sago pearls. Serve warm ❤️

Crispy Baked Shrimps


I seen this popiah wrappers prawn somewhere but cant remember from where. Been in my to-try list for the longest! And since I have popiah skin at home, I tot good to try and have it as our sides for tonite’s dinner ❤️


I am aircrisping them in my Ninjafoodi and love that it is really super grease-free! But I did a wrong move, I should have layer a few more layers. My wrapping was too thin and thus cant crsip up nicely for the whole shrimp. Only certain parts are crispy, especially at the overlapping part. 


This is how I wrap the shrimps. I suggest dun cut the strips shorter like me. Probably jus strips it at the original length and go a few more rounds. (I am using the big squares, cut into 4 quarters then I cut into strips) Remember to go a few layers and brush oil! Try it and tell me if it’s better cos I am gonna try it out myself too! 




Crispy Baked Shrimps
Approx 15 shrimps 
Popiah skin, cut into strips (approx 10 big sheets)

1) Wash and pat dry shrimps
2) Take popiah skin strips and roll them around shrimps til the tail
3) Brush with oil and Aircrisp 180deg x 10mins

Baked Honey Herb Winglets


Yummy winglets baked with honey and herbs with some simple seasonings. So delicious and juicy! Fingers lickin’ good 😋😋


Luckily I can grill in a batch, fitted just nice for 500g of winglets ❤️ Wonder what came into me that I miscalculate all the cooking time today! Kids are rushing at the living room for food 😬😬

Baked Honey Herb Winglets
500g midjoints
1Tbsp sesame oil
2Tbsp light soy sauce
1Tbsp oyster sauce
1Tbsp huatiao
2Tbsp honey
Parsley flakes
Chopped garlic
Pepper

1) Marinate the midjoints at least 1-2hrs ahead. For best flavour, marinate overnight
2) Grill them on Hi for 8mins, brush with marinade liquid and flip and grill another 3mins

Mushroom Soup (Pressure cook)


Been wanting to try pressure cooking Mushroom soup and didnt expect it can cook so fast! In 25mins, I get a bowl of hot piping Mushroom Soup! Lovely ❤️


Everything done in the Ninjafoodi, Saute the ingredients then pressure cook them! I didnt blend the mushroom as I prefer to taste the mushroom chunks. U can definitely use your hand blender to make them into smaller bits if you prefer too 😋 

This is a quick fix and I even baked all my burger buns then reusing the pot straight to cook! BEST PART - 1 pot to wash 👏🏻👏🏻

Mushroom Soup (Pressure cook) 
500g Swiss brown mushroom, chopped
1 onion, chopped
5-6 clove garlic, chopped
20g butter
4-6 cups water
2Tbsp hommade chicken powder
200ml cooking cream
2Tbsp corn flour

1) Saute mode :HI, Add butter to melt
2) Add in chopped onions and garlic and fry til the fragrance comes out
3) Add in mushroom and stir fry them til it soften. Add in chicken powder and mix
4) Add water to 6cups mark and Pressure cook :HI x5mins
5) Release pressure, Saute mode :HI n bring to simmer. Prepare cooking cream and stir in cornflour
6) Stir in cooking cream mixture once soup start simmering and serve warm ❤️

Chocolate bear paw cookies

 

Been wanting to bake this cookies for the longest but have been quite lazy to bring myself to do it. And since tonight I am using my pressure cooker to cook, I have some time to spare. So here we go! 


I can load around 9-12 cookies per round and took me about 3-4 rounds to finish them! As the temperature is evenly spread out, I only need to bake 8mins for the mini ones! So fast compared to using my Oven previously! No regrets getting this to replace my airfryer oven which I had. 


The youngest love it so much and the big ones cant stop eating. We serve the tray of cookies over tea break with fruits! Such a great way to balance out ❤️ 

Chocolate bear paw cookies (recipe from Cookidoo)
110g Butter
60g sugar (I used a mix of brown and caster sugar) 
1 Egg
220g flour
30g Cocoa powder
Pinch of baking soda
Pinch of salt

1) Mix butter and sugar til combined
2) Add in egg and mix well 
3) Add in dry ingredients and mix til it forms a dough
4) Shape cookies accordingly to your preference
5) Bake 180deg x 8mins (for mini paws) or 12mins (for big paws)

Cheesy Baked Scallops


Easy side dish and all-time favourites ❤️ Too simple to recreate and it cost a bit high to have them outside 😂


I can add more cheese and mentaiko when baking them myself! My #2 all time favourite! 
 
Cheesy Baked Scallops
7 Scallops on shell
Pizza cheese
Mentaiko mayonaise
Parsley flakes

1) Wash n pat dry scallops
2) Squeeze mentaiko mayo over scallops. Put pizza cheese on top and sprinkle parsley flakes
3) Grill for 10mins, checking halfway to ensure it brown nicely. Subsequent grill at 8mins. 

Grilled Seafood Skewers



Loved seafood and wanna something different from having rice! Decided to roast potato wedges and make a simple pasta salad for dinner. 


I roasted the potato first and my youngest kept running in. He says he smell something yummy and keep asking me what’s that. Even my gal came to peep. 😅


Seafood skewers was next. Easy and only need 10mins of grill time. Simple flip them halfway thru cooking. Easy right! This one my youngest said that it smelled like PIZZA! Probably from the capsicums!! LOL


Our simple meal for today ❤️

Grilled seafood skewers
Shrimps, peeled
Squids, wash and cut
1 Capsisums, cut
1 Onion, cut

Seasoning
1Tbsp Pink salt
1Tbsp Parsley flakes
Black pepper
1Tbsp olive oil

Crispy Potato wedges
4-5 potatoes, wedge
1tbsp olive oil
1tbsp pink salt
1tbsp parsley flakes

1) Skewer seafood of your preferred sequence with capsicum and onions (i added my leftover baby corns)
2) Toss washed potato wedges in marinade and aircrisp at 200deg for 20mins. Checking and tossing them at 5mins intervals
3) Once all nicely browned and crispy remove
4) Add in seafood skewers and sprinkle salt, pepper and parsley flakes
5) Grill on HI for 10mins, flipping halfway. Subsequent grill at 8mins. Sprinkle with some chilli flakes to add some spice before serving if you prefer 

Popiah skin crackers

 

Easy snack for tea break, or easily a simple sides to your meals. Kids super love and keep asking who made it. 😂 A nice friend shared this idea with me and I remembered I still have some popiah skin left so used them all up for these! 


So simple, 8mins is all it takes! Worried that it be too heaty so I actually cool it off to room temp before offering to the kids.

Popiah skin crackers
Some popiah skin, roll up
Truffle salt
Parmesan 
Parsley flakes

Some oil for brushing

1) Roll popiah skin into rolls
2) Brush with oil lightly and sprinkle toppings (I use truffle salt, grared parmesan ans parsley flakes
3) Aircrisp 180deg x 8mins

Shredded chicken mee sua

 

Been wanting to try making this taiwanese mee sua at home but didnt had time to cook. Now I can pressure cook my broth, its the best time to try. Especially since kids are all home for the school holidays. 


Simple pressure cook for 10mins and natural release for another 10mins before i open vent. So easy! Adding in the rest of ingredients and seasoning and a simple lunch is ready ❤️❤️ 

This is a simple version if you crave for some taiwanese mee sua. And I did not add oyster as no one eats them. You can add whatever ingredients you love. 

Shredded chicken mee sua
1 chicken breast
1 dried cuttlefish
handful of dried scallops
1 slab ginger
1 garlic
6cups water
2Portion mee sua

Seasoning:
1Tbsp dark soy sauce
2Tbsp homemade chicken powder
Pepper

1) Put ingredients into pot then add water til 6 cups mark
2) Pressure cook on HI for 10mins and natural release 10mins
3) Saute mode: HI, add in mee sua and stir
4) Once bring to a simmer and add in chicken powder, dark and light soy sauce to taste. Thicken with cornstarch. Serve warm

Claypot Rice (Pressure cooker)


 Impromptu decision to make something simple for late lunch after our zoo trip. So I decided to try out using the pressurecooker for fast cooking! Claypot rice alike came to my mind 😏😏


I prepared the ingredients nighe before and quickly
dump them in while getting ready for the outing. Easy cleaning up too as only need to wash the container that I prep the ingredients then leave it to do its job! 


Tadaa~~~ In a short 5mins of cooking and releasing pressure for around 15mins, it is ready to eat. Left it to keep warm while all of us go for an outing to the zoo! So convinent! Yay to Ninjafoodi! 



Claypot rice (Pressure cooker)
3 cups of rice
3 cups of water

2 boneless chicken legs, sliced
5-6 chinese mushroom, soaked and sliced
3Tbsp oyster sauce
3Tbsp dark soy sauce
2Tbsp light soy sauce
2Tbsp huatiao
2Tbsp sesame oil
Pepper

3 clove garlic
1Tbsp sesame oil

1) Prepare chicken and mushroom and marinate with above sauce overnight
2) Saute mode Hi: Put 1Tbsp sesame oil and saute with garlic
3) Add in marinated chicken and mushroom slices til prtially change colour
4) Add in rice and water and stir well
5) Pressure cook HI for 5mins and natural release for 10-15mins. Serve warm

Cheesy shrimp paste beancurd

 

Add on to our dim sum lunch ❤️ Added cheesy shrimp paste beancurd as 1 of the sides. So crispy and yummy! Kids love it so much and not so oily as compared to deepfrying them. 👏🏻 Quick fix in 8mins!! 

Cheesy shrimp paste beancurd
1pk of beancurd sheets (i got mine frm yong tau foo stalls at wet market
1pk of cheese shrimp paste


1) Put beancurd sheets flat
2) Squeeze the paste on 1 of the sheets and spread them flat then layer with another beancurd sheet and press it tight
3) Put in airfryer basket and bake 180deg x 8mins, flipping them halfway. Serve warm!

Easy Grill Steak



First time trying out my Ninjafoodi to grill my steak. Been hearing that steak can be airfry, can be grill in Ninja but yet to try them out! Today had the chance to play as wanted to have beef as our protein for dinner tonite! 


8mins is all it takes! Rest for a further 5mins before cutting it. This doneness is slightly more cooked than medium well as there is still a bit of redness in the center of the steak. If u wan medium well, i supposed can grill 3mins per side. If u want well done, 5mins per side would do the job for you! 


The kids had some of the steak too! So yummy 😋😋

Easy Grill Steak
2 Striploin
Pink salt
Black pepper

1) Rub and marinate striploin with salt n pepper for 5mins
2) Put steak in basket and grill on HI for 4mins
3) Flip and grill another 4mins
4) Rest for 5mins before cutting
